  • I love jerk chicken so I tried to do the same thing with steaks and OMG the results was not what I expected. I can not believe I never seen this before. The flavor or this is not only fantastic but pleasantly surprising.

    Honestly, there are very few things that get me visually hyped up anymore. But Guga getting giddy over a successful experiment and dancing to the tune of his own flavors still gets me each time. The hype is infectious.

      @@nickeezy17 What about the basting with a ketchup based bbq sauce? Idk, I thought that was kinda odd. I try and aovid the jamacain places near me that taste a bit too sweet and BBQ-esque for jerk and oxtail, but I'm not Jamacain. Is that typical or traditional, to baste with a sweet sauce, even one with a ketchup base?

      @@jaytrain3692 i think it depends on the person. Some of us like it sweet and some like it spicy. I think as long as you have the scotch bonnet and pimento in that marinade you can’t go wrong.

    I've been doing jerk steak brisket and even ahi tuna for years It's so delicious I use my friends moms jerk recipe she still lives in Kingston 🇯🇲 it's the best jerk seasoning I've ever had I love this on flank steak and making tacos out of it

    The Caribbean Jerk isn’t “authentic” at Buffalo Wild Wings either, but, it’s far and above my favorite flavor there. Sweet, smokey, spicy, and an absolute 10 on the flavor scale. They are my wing happy place.
    I love your idea of a jerk brisket. I think that would be amazing.

      I've seen the real deal that was made by a Jamaican at the city market fair. It's more green than what's in this video, and most of that store stuff is brown. Also, store stuff tends to have too much of one ingredient, throwing off the balance.

    One time my brother had a school geography project on Brazil and he had to make a Brazilian dish. My mom made some kind of bacon, rice, and beans dish and I was wondering if you knew what it was called or could put it in a video because it was FREAKING DELICIOUS and I haven't been able to find a recipe that tasted the same since and I need it Guga.       @@toastrecon if the rice and beans were mixed before the dish was served, it’s probably Baião de Dois. If the rice was served as a side dish, and the main dish was black beans with pork and sausages, it could be a feijoada.

    Haha, I love how in all of his videos he ALWAYS covers his mouth when eating. It is very respectful, but the fact he does it to a camera... High praise. A lot of people get highly annoyed by people eating and talking... I could care less, but the fact he does that facing a camera. High praise Guga! Very genuine.

    I've been making jerk steak for about 15 years and there is nothing like it. Personally I love Walker's wood jerk marinade. I think that marinade is the closest I've ever had to real Jamaican jerk chicken from Jamaica

      It really is and an old lady who makes it everyday said it really is the same ingredients anyway. Grace jerk marinade is really just as good as well. I’ve made my own jerk marinade as well but when I don’t have all the ingredients I go with Walker’s or Grace. I have 3 Scotch Bonnet plants when I want to go full authentic

      That's what I get. I've made it from scratch and the difference was so small in no way did it justify the labor of doing it again. Though if you are making a lot of jerk like for a party, making it in bulk is a lot more cost effective.

    I got the privilege to spend a month in Jamaica 🇯🇲 and it was absolutely amazing to try jerk chicken there. The best ones are the small stands on the side of the road. They prepare it right in front of you. Awe man was it amazing. I have not found any place that can replicate it, but could only imagine that Guga could. Love your videos and would love to see the jerk brisket!

    In my country, Malaysia, we have this sweet chicken dish called 'ayam percik'. I don't know much about it since I'm not a chef and all I do is eat😂 but Guga should definitely try it on chicken and on steak. We never use steak, only chicken, so I wanna find out how it'll go.

    I’ve done this many times before. Used steak, fish, shrimp, and of course chicken. I make my own jerk sauce and marinade. It’s also best to include salt in your marinade. It helps to allow the marinade into the meat. The biggest key of jerk anything is to cook it to the bone or until the flavor sinks completely into the meat. You also want to slow cook the meat on a grill/smoker after first searing in the flavor initially. Wood charcoal instead of regular coals. This method makes the meat 100% tender in the end, but also super juicy. If it comes out dry you cooked it too long or at too high of a temperature. Slow and low is always the key to jerk. It can take one hour or more depending on the thickness of the cut of meat. Try it out and watch how much better it tastes!

    What’s hilarious is in my imagination of me watching shows like Master Chef, they always want something new and I said that if I ever got on the show I’d do a jerk steak like a jerk ribeye or filet mignon because I’ve never heard of anyone doing it before but leave it to Guga the Mad Steak Genius 😂💯

    For the Jerk Brisket I’d probably add a Little fresh Bhut Jolokia(Ghost Pepper) flakes, like a pinch per 10 inches of meat, and let marinade overnight. It has a delayed heat effect and the flavor is like fruity and barbecue-y. Only an idea, but whether you jump on it or set it aside I still wouldn’t miss the video.

    Funnily enough theres a resto on my city (it moved/closed for good idk exactly) that serve indonesian style jerk ribs and it tasted amazing so ik exactly the feeling of excitement these two are feeling on the vid. You go Guga! Cant wait for the brisket

      Most authentic restaurants have jerked steak, pork and fish. I've tried them all. more so recommend pork for something new. Jerked steak is just ok

    Me and my dad used to make jerk steak all the time and it was amazing! One time he made it so spicy I walked into the kitchen and one whiff made me cough haha. By the time I finished eating it I was drenched in sweat.

    The jerk chicken is missing the black beans to go with the rice, if you cook the chicken in oven the juices from the marinade/meat poured over the rice makes it all the more amazing.

      I could live without the beans, but what I was thinking while they were just trying it out is I would want some sort of sweet fruit/veggie thing. Maybe a mango/plantain with goat cheese. I don't know what they're called, but when I've had Jamaican, or Afro Cuban food before, they'll have something odd like that and it just cuts into the flavor profile perfectly.

    As a Jamaican living in Jamaica , I can say there are few things off about "your take" on our jerk chicken but it's within acceptable margins. Only thing your missing is the PIMENTO WOOD.
    The cooking process is just as important as the seasoning and a major part of that is the PIMENTO WOOD. I'd recommend that for your brisket experiment. Thank me later.

    Jerk Marinade looks good. I usually add the juice of 1 lime to mine. Do a whole chicken spatchcock and throw it on the grill. Baste with a combination of the jerk rub and Red Stripe Beer.

    As a Jamaican I approved this! I loved how you used scotch bonnet pepper and no other kind. And also the use of all spice (pimento). And also you didn't grill the chicken over open flames but to smoke it. Lots of people don't get that jerk chicken is supposed to be smoked and not grilled over flames. In Jamaica it's done over either in old metal drum pans making them "Pan Jerk" or it's smoked over all spice (Pimento) wood covered with metal zink "Traditional Jerk". Thank you Guga!

    Pair the jerk steak with curried veggies and beans & rice. Not only is that a good taste mix, the beans (I use a mix of black & red kidney beans, just my taste, YMMV) but the beans are absolutely *loaded* with antioxidants. The char on the steaks can contain some carcinogens, but if you load up a third of your plate with the rice & beans, that’s like an antidote for any bad things about the char.
    Oh, and a nice, muscular red wine or Jamaican Stout.

    Jerk is a lot simpler than that. It’s allspice, white onion, fresh thyme, Scotch bonnet pepper, and salt. No more, no less.
    And the key is to cook it over pimento wood, same tree as allspice berries come from. It creates a unique spicy-smoky flavor.
    I’m sure your method is plenty tasty, but there’s a reason why the traditional recipe has endured so well. It’s well worth a try.
    Also, jerk pork is some next level stuff. You owe it to yourself to try it. Any fatty, collagen-rich cut, like you’d want to use for barbecue or carnitas is the best for this. It’s so rich and it absorbs so much flavor. Although lean and tender cuts, like the loin, are good too - you can expect a flavor and texture more in line with jerk chicken in that case though.

      Rice and peas was needed here, that plain rice just looked so lonely. I don’t mind bbqing jerk chicken quickly sometimes, but slow cooked in the sauce till it’s falling apart is absolute perfection according to my tastebuds 😋 I would love to try that steak though, that looks delicious.
