It’s just a Chinese black vinegar, google it you can find it in your area probably. There’s a big bottle inexpensive version which is what he’s using and there’s a more expensive smaller bottle/more concentrated kind which is not being used
You can think of it like balsamic, it’s not the same thing but similar concept

White vinegar tastes sharp, black vinegar tastes round. That sounds like I’m trolling, but honestly, that’s the most complete way I can think of to communicate the difference.

White vinegar is fermented (grain alcohol) acetic acid mixed with water. Its taste is sharp, harsh, acidic.
Black vinegar is made from gains, sorghum, or barley and is usually aged for months to years. It tastes mild, slightly sweet, complex flavors.
White vinegar is common in pickling and marinades. Black vinegar is a staple in asian cuisine, especially China, for sauses, dips, anything really.

I wanna add to this thread that white vinegar is best as a household cleaner. Black vinegar, white and dark balsamic, apple cider vinegar, etc are best for cooking.
If it calls for white vinegar, grab some white balsamic. Its sweeter so will require less sugar/fat to balance to dish and its not very expensive as you dont need to use alot. Compared to white vinegar, it is definitely expensive. But its not a very expensive condiment overall. White balsamic vinegar beats plain white vinegar all day.
