Ned Bakes Sourdough Bread For 14 Days

    Thanks for watching my bread journey, I'll be replying to your comments for the next hour and want to hear your tips!
    Here is my official recipe so you can follow along at home:
    Ned’s Bread
    INGREDIENTS
    350g Warm Water
    12g Salt
    100g Sourdough Leaven
    ¼ tsp. Active dry yeast (optional)
    400g Bread Flour
    50g Whole Wheat Flour
    50g Spelt Flour
    Sourdough Starter
    100g Warm Water
    100g 50/50 mix all purpose flour & whole wheat flour
    INSTRUCTIONS
    To create a new sourdough starter, mix the 50/50 all purpose flour and whole wheat flour blend with warm water. Let sit on your countertop, covered for 3-4 days initially.
    12 hours before you want to make your loaf, feed your sourdough starter. The feeding process involves discarding 80% of the previous day’s starter and adding equal parts water & flour. For ongoing starter maintenance, feed it roughly every 24 hours. Don’t stress. It’s forgiving: you can miss a day or refrigerate for several days.
    Once you see large bubbles and your starter has risen into a leaven, it’s time to start a loaf! Start by adding 300g of warm water to a medium mixing bowl and add 100g of the sourdough leaven. It should be nice and bubbly and pass the “float test.” If your leaven is having an off day (not floating, not bubbly) but you still want to eat bread, it’s totally kosher in my book to add a little bit (¼ tsp) of store bought active dry yeast to ensure a good rise.
    Add the bread flour, spelt flour, and whole wheat flour. Mix together until it forms a tacky ball.
    Cover and let rest for 30 mins to an hour.
    Next, add the salt and an additional 50g of warm water. Incorporate the salt fully.
    Now it’s time for the bulk fermentation. Watch over it, giving it a turn every 30 mins by pulling up the bottom of the dough and flipping it over itself. When it doubles in size and passes the “poke test,” it’s ready to shape. To do the poke test, poke the dough. If it springs back slowly, it’s ready; if it leaves a dent or springs back quickly, it’s over or under proofed.
    Flip the dough out onto a lightly floured surface and shape the loaf into a ball, by flipping it under itself and rotating it 90 degrees again and again with your hands forming a little cupping motion. Try not to use too much flour or work the dough too much at this point. Let sit for 20-30 mins.
    Perform final folding of the dough, pulling each edge up and over itself, rolling the dough forward on the last edge so all the folds are on the bottom. You should have a nice round little dough ball now. Place it in a lightly floured basket or bowl, cover and let sit. Rice flour works great if you have it but all purpose flour is fine.
    Watch for a final rise, approximately 2-3 hours, again looking for it to double in size. At this point you can set it in the refrigerator overnight to develop additional flavor and bake it the next day.
    After the final rise is complete, preheat the oven to 500ºF and place a cast iron pot in the oven.
    Once it’s preheated, remove the pot and place your loaf in the bottom of the pot. Score the top of your loaf however you’d like! Common designs are a box cut, diagonal hatches, or I like to add an “N” for “Ned’s Bread.”
    Cover your pot and bake at 450ºF for 25 minutes with the lid on. This will help trap the steam and give the bread oven rise.
    Remove the lid and bake for an additional 25 minutes
    You’re supposed to let it cool on a rack for an hour. But we almost always eat it when it’s still warm and serve it with salted butter!

    My family has a 70-year-old sourdough start that my grandpa has been tending, then my father and now me! It's such an amazing thing to be able to share sourdough bread or rolls or scones with family. I love the way that Ned has been leaning into the bread journey with Wes along for the ride! Also, don't be dismayed if your sourdough is touchy or difficult to work with because even a seasoned baker (my father) still swears at his sourdough when it doesn't turn out under perfect conditions.

      My uncle gave me a starter that was from the late 1800’s. I made bread with it and it was delicious, first try lol. I’m trying it again today with a few different things, and think it’s gonna be great! Cool to hear about that

      @Hay Thi Win Aung Sourdough is actually a constantly growing, living organism so you can take a small portion of the starter and use it to make bread, then continue to feed the remaining portion of the sourdough starter for future use! I hope that makes sense :)

    I love how involved Ned allows Wes to be in his videos and projects. Some parents would not let their babies or little ones be so integrated with what they do, thinking they will mess it up. However, Ned and Ariel exposes Wes to so many things which teaches him a lot. These experiences he are so good for his overall development. He is going to grow up to be a well adjusted, knowledge and talented kid and eventual adult.

      The only problem is that Ned shouldn't expose Wes a lot because then he will be targeted by child predators and people pressuring him to be on the media. But I don't think that will be a problem for Ned.

      Some of the "best raised" kids can still end up as drug addicts or grow to be terribly manipulative people. Baking bread with your toddler isn't going to change that. Random choices throughout adulthood ultimately decide what a person will be like.

    This made me so happy to watch. I recently went back to work after being a stay at home mom for 14 years. I kept a sourdough starter alive for about 12 of those years. Baking bread with my little boy was a ritual of life for years. I miss those days. It was delightful to see you and Wes making memories together like we did. My son is now a teen, and we enjoyed watching this video together. Thanks for these warm feelings. May you treasure these memories forever too. They grow so freakishly fast.       @@Komerican10 you've just gotta keep feeding it, over time you'll recognize how often it needs it just by looking (instead of going off a schedule). if you keep it in the fridge it lasts way longer between feedings. ive never been able to keep mine healthy for too long though, i have adhd and always forget to feed it lmao

    This was surprisingly motivational! Because Ned takes things so seriously, including his failure, it often gets depicted as pure rage and frustration when he’s with the other try guys (which is still fun to watch hahah) but on his own, he really reflects on his failure and is very constructive about it. I don’t bake but I’m still glad I watched the video :) thanks for the amazing video Ned!

      I actually got my bread maker out to make some bread but then realized you need dry milk and I don’t have it. When quarantine hit we grabbed yeast and bread flour but spaced about the dry milk.

      @@amitypuff Using a baby voice delays kids from actually learning language. Toddlers are often very capable of speaking in full, complex sentences, but people don't see it too often because of how many parents use baby talk for their children for too long.

    Me and my dad love to bake bread, when the bread comes out of the oven is always an exciting moment so I can understand how you feel, and about morning bread, focaccia is always a good to go, when my dad makes it my mom gets sooo exited because she loves it very much.
    We've been baking for years now and almost never buy bread from the store because is never as good as homemade. This is a beautiful journey
    And about the oven miscommunication: we are used to fist see if something is in the oven before turning it on but that's after soo many accidents haha, sometimes we even let notes just in case

    Don’t throw away your starter! There are so many discard recipes.
    My fave is just flopping the starter in a hot oiled pan then you just put green onions, Chili flakes, salt and pepper. Flip until crispy and you’re done!

    Another option for a starter is asking around to friends/family, asking if they have some starter you can use. This makes the whole first part of making the sourdough a lot easier.
    Key Tip: Remember to keep a portion of the starter mix before baking, so the next time you want to bake the bread you'll have the starter you need.
