    Hi everyone!! In this video I show you a typical day of eating for myself as a high starch low fat vegan. Ill also show you guys how to make an easy and super tasty Tortilla Soup with oil free tostadas and vegan sour cream.
    While in this video I share with you guys that ive cut back on the amount of breakfast I eat, That does not necessarily mean Ive cut back on calories....Im eating more at lunch and dinner and I always listen to my body. If Im hungry I eat without restriction of whole plant based foods.
    Tortilla soup Recipe:
    1 onion chopped
    3 cloves garlic chopped
    6 roma tomatoes chopped or use canned diced tomatoes
    Juice of 1 lime
    2 cans beans of choice
    1 bag frozen corn or you may use canned or fress corn
    2 small cans diced green chilis
    1/2 jar oil free marinera sauce (I love a garlic one)
    1 32oz container of vegetable broth
    1 cup chopped cilantro
    water saute onion and garlic, then add tomatoes, then add the rest of the ingredients and let simmer for 10 minutes. Serve with cilantro, avocado (optional), vegan sour cream (optional), and oil free tostadas.
    Sour Cream:
    1 container plain unsweetened coconut yogurt (by so delicious)
    1 tsp vinegar
    1/4 tsp salt
    mix and use like sour cream
    oil free tostadas:
    corn tortillas
    place corn tortillas on parchment paper on cookie sheet and bake in oven at 425 for 10-12 minutes until crispy. watch carefully they burn fast. They get crispier once cooled so dont burn them:)

    I made the tostadas last night and topped them with black beans and cabbage mix from Trader Joe’s. So, so good. And I now buy dark sweet cherries from Whole Foods (since I already live at WF anyway). Eating them now actually lol. Thanks for suggesting the cherries. They are so sweet and tasty!

    incredible recipes, so simple yet so much flavour and choice, I was terrified of carbs and on off keto for 2 years, that got me to the highest weight ever - to obese! now vegan and it blows my mind how many flavours with simple ingredients there are, thank you and pls keep us posted :)

    I started binge watching your videos and you've inspired me to go on the starch solution. I'm already vegan so it's not a very big diet change but I was wondering since you eat low fat have you noticed any hormonal changes and did your nails and hair get weaker...also what do you do for omega 3 and 6. Thank you very much in advance 💚🌱

      Vegan Niunia so I went low fat after reading the starch solution and learning that all the fat I was eating was also messing with my hormones. After eating so low fat all my hormonal issues cleared up, hair thinning stopped, my nails grow fast and strong and I did just have all my levels tested and omegas were perfect. You could always add a tablespoon to your oatmeal every day if you want to be sure:) I’ve read from dr mcdougal and dr Barnard that ground flaxseed is really good for hormonal health

      I put one or two tablespoons of ground flaxseed to my oatmeal every morning ....i have been whole food plant base high carb low fat for 4 years & i just had my blood work checked and everything came back perfect.

    Thanks for the quick and easy tortilla soup recipe. Will be trying it next week. Also I super appreciate you talking about halving your food intake now that you’ve lost so much weight. I am like you were after eating 1/2 cup of oatmeal and my veggies for breakfast I’m not hungry until 2:00pm. I will try this and see if I get the same results. Love. your videos ❤️❤️

    cool ! I found your portions especially breakfast quite large haha but hej it can differ per person so no judgement. But this does leave more space for adding some seeds/nuts for extra omega 3 and nutrition. But cool that you got aware and are finding your new natural way of eating and listening to your body

    I just love your simple videos. They really inspire me! I’m going to have to change things up though. I want to lose 5 more pounds and I am just stuck and it’s really frustrating me. I’m 3 months in and still need to lose the extra pounds. Breakfast is usually oatmeal and banana or sprouted toast. Lunch is 1/2 can pinto beans and cold or baked potatoes and spinach. Dinner is usually cereal, cold new potatoes with the rest of the beans. I love the food, but maybe I eat too much? Sorry for rambling, I’m frustrated.

      Sounds like you need more veggies to me... Add in some cruciferous for every meal like broccoli, Brussels and cabbage and maybe take a DIM supplement or Indole 3 carbinol cause it may be hormonal 👍. All of this helped me btw

    Hi Kiki thank you for all your videos. You have motivated me to try out being vegan and use the 50/50 plate method. I tried to be completely vegan for 3 days and found my self feeling awful, tired, bloated and more hungry. I ate a home made soup with Kale, beans, veggies and home made tomato soup base. But instead of feeling great, I felt so bloated and tired.
    I have been a meat eater my whole life, trying to make healthier changes in my diet, with a lot of the similar health issues you used to have. Do you have any advice for me? I want to lower all my cholesterol levels and other health issues. I feel at a loss and felt better eating a high fat, low carb keto diet with more mental clarity and energy. I guess I tried! :(

    mmmm...that tortilla soup! Thanks for sharing your recipe as well as what you eat in a day. Quick question...you said popcorn on the weekends. I miss popcorn (air-popped) because I don't use vegan butter anymore. What do you put on yours so that you don't feel like you're eating styrofoam packing peanuts? I love sweet & cold at night too, but my daily go-to is 365 organic frozen blueberries, cherries are my 2nd fav, or sometimes banana nice cream, lol! And your garden is wonderful - you have a quite green thumb! Awesome closing thoughts too

      Mountain hiker thank you! So I air pop the popcorn and spray either with water or liquid aminos then I add nutritional yeast and a little salt if I used water because the liquid aminos are already salty

    KIKI...I have a blood disorder called hyperlipodemia (which is a fancy word for chol/trygs numbers are in the 1000s. Yes 1000s+++. I went vegan in '12 and my numbers significantly dropped without meds. During the last three years i lost both my parents and now i help take care of my FIL who has Alzheimers. On Jan 1 after a few health scares of my own i decided that i needed to do whats right and get back to being vegan. My blood disease is made worse by fat...any kind of fat. However everyone keeps telling me carbs are from the devil. Whats your story and opinion on this? I need to loose around 70 lbs. Watching your videos have given me hope and i love the fact the you put recipes on there too. 😊

    Your stomach is probably smaller so you can eat less, but hey you lost weight anyway. That is the great thing about plant-based eating. Hope I can get in good shape like you.

      Jose Sanchez you know I’m not sure...o guess it just depends on what is causing problems....it cleared up my husbands digestive issues because dairy and meat upset his stomach all these years and we didn’t know. Dr mcdougal and dr Barnard both speak to the fact that it does help digestion but you might need to consult a dr if you don’t find relief.

    Pro tip for steal cut oats - soak in water - less time to cook, and when I do cook them put your flax seed and banana in to make a creamy! Oatmeal quicker

    None of the WFPB physicians recommend coconut products or palm oils because of their saturated fat content. PCRM states that these are not healthy fats as does the American Heart Association (AHA). FYI.

      I use pan cooking spray...for my Airfryer home fries ... will it have a negative affect on losing weight?? I been trying to follow the starch solution for about a month, but again, I do use pan spray from time to time and I'm afraid to get on the scale, because I'm afraid I'm not losing weight 😢😢

      Boomboomcoa Coates I would think that a light Spray would be ok but I don’t know for sure if it would affect weight loss. My mom and dad both use spray and they have t had trouble losing weight but they also have had a lot to lose....I would think if that’s the only fat your getting, no but butters, avocados, oil in pasta sauce, on bread or crackers...that you should be ok at least for a while. Of course you could leave it off and continue to focus on lots of starches fruits veges and legumes and you should do great. Give your body time:)

      Christine Armstrong so I seriously only walked for exercise while I lost weight. It’s only on the last few months that I’ve started doing some squats and lunges cuz my legs have gotten skinny lol. But I just walk or hike for 30-40 minutes everyday :)

      cant find any oil free anything! its so awful when supermarkets only offer convenience foods that are full of oil! its like we have to choose between saving time and sticking to our healthy eating regimen. a lot of them are limiting sugar and salt in foods but still, in australia at least, its extremely difficult to find oil free foods. wah.

    I think since you worry about weight so much why not go a little further and eat all organic or at least non-gmo. Its better for your health all the way around and better for our planet. Kroger is not a very good food brand. I have no problem finding organic or at least non-gmo for all my ingredients.
