Hi Sim Han Long. First, let me thank you for watching my channel! If I recall correctly I used something like 1 kg of left over pork ribs that had already been on the bbq (that's what I usually make my broth from). Just put them in a large-size pot together with a handful of onions, 1 tsp salt, a carrot if you have, some spring onion, a couple of cloves of garlic, and a little bit of white wine. Fill up the pot with a few liters of water and let it slow boil and reduce for 3-4 hours before you strain it. Freeze any leftovers and use them next time you cook. Good luck! /Amy

Ancela Vesper Nice observation for what should be in typical Tom Yum soup, but there’s no galangal in this Tom Yum Noodle recipe. Many kitchens or restaurants like to use Milky Tom Yum Soup Recipe and then add big shrimp, Big seafood pieces and noodles into the soup which has galangal. So I understand why people asked this question. They are 2 different recipes 🙏
@@WorldofThaiFood Thanks! BTW, what is the alternative to galangal. Many say that you can replace it with ginger, but I know ginger taste is an entire world different from galangal. I've searched online and they have this "galangal tea" under the "seasoning" description. Will it work?
Ancela Vesper hello again. I’m not sure about the tea but you are right that galangal should never be substituted with ginger as they are completely different. While living in the EU, US, Africa and other places Galangal was not always available. Instead of trying to substitute it I opted for another dish altogether that didn’t include galangal. If you’re craving Tom Yum soup but can’t find fresh galangal then buy a jar of ready made paste to keep in your pantry. It works for emergencies.
