Interesting to see how you manage to achieve a perfectly smooth butter texture. I like bone marrow, but the texture of jelly bothers me sometimes. Maybe making this kind of smooth butter could help a lot.

Using the top of your lip and a skewer to check for steak temp is one of the more creative ways I’ve seen lol. Love the kitchen setup.

Notice the small details. If you wan to do this quenelle butter technique, the spoon needs to be hot. Just before he did that, he put the spoon against the flame for about a second. Perfect quenelle every time as it slips off the spoon!

I've learned that I shouldn't cook steaks straight out of the fridge, but thanks for mentioning it. Most (if not all) of the meat prep videos don't mention that and I ended up with unevenly cooked meat for a while. Good tip for beginner/intermediate cooks.
Naw, it's an old wives tale. The meat may bump a couple degrees by sitting out, but in general it's still a really cold piece of meat when it hits the pan.

@@jacobpoulsen5414 At least an hour but it depends on the temperature of where you're leaving it to rest.
@@badicusvibesimus182 yeah so after an hour it's going to be about 6 degrees warmer, nowhere near room temp. In order to get the steak even close to room temp it will need to be out on the counter far beyond the 2hour maximum recommended by chefs and the FDA. If you want to take your steak out of the fridge for a couple minutes to take the edge off go ahead, just don't pretend that you are drastically changing the temp, cook times or final product. My recommendation is to learn to cook a well-executed no-frills weeknight steak without the added stress and complications of laborious old wives tales.

@@tunayumrukuz7744What are you smoking…108F internal temp is well below rare, its not even close. Not saying I wouldnt try this because it looks amazing. But its objectively true that this isn’t even in the ball park of med rare.
He said he wanted to cook on the "rarer side of medium rare" and that's pretty much what this was.
Bro….its 108 internal temp by their own on screen graphic. Rare is widely considered to be 125, so its 17 degrees below rare. Put it this way…that is further below rare than medium is from well done…

Do you think you could use bone marrow butter to make gravy or would it burn while you're lightly cooking the flour?
Use olive oil and flour and then add the butter at the end for the glossing
