    VINAIGRETTE RECIPE⤵️
    ✨Ingredients
    1 cup Extra Virgin Olive Oil
    ½ cup Apple Cider, Sherry, or Champagne Vinegar
    ½ teaspoon Dijon mustard
    1-2 cloves garlic, finely minced through a garlic press
    2 teaspoons kosher salt
    1 teaspoon ground black pepper
    2 Tablespoons granulated sugar, honey or agave
    ✨ Directions
    Pour all the ingredients into a bowl or liquid measuring cup, whisk well then transfer to a clean glass bottle with a tight-fitting lid. Keep cold in the refrigerator for 2-3 weeks. The vinaigrette will separate, and the oil will solidify, so it’s best to remove from the refrigerator about half an hour before use, or microwave for 15-30 seconds to reintegrate. Shake well and enjoy!
    ✨Notes
    1 - 2 Tablespoons of dressing per person/per handful of greens. Start with 1 Tablespoon then add more after a good tossing. (A well tossed salad can be lightly dressed.) Great with Spring Mix or arugula, throw in some berries, nuts and/or dried fruit and top with feta, gorgonzola or cubes of your favorite cheese. Also delicious over romaine or iceberg.
    KALE SALAD WITH LEMON AND PECORINO⤵️
    Servings: 6
    Preparation time: 15 minutes
    ✨Ingredients
    2 bunches Kale, washed, trimmed and cut into ribbons (chiffonade)
    Juice of 2-3 lemons, equaling 1/2 cup
    3 Tablespoons extra virgin olive oil
    3-5 cloves garlic, finely minced
    1/2 teaspoon kosher salt
    1/2 teaspoon fresh ground black pepper
    1/2 to 1 cup pecorino cheese, shredded
    Optional toppings: 1/2 cup croutons, fully cooked crisp bacon
    ✨Directions:
    Place the prepared kale into a large serving bowl. Whisk the lemon juice, olive oil, garlic, salt and pepper in a small bowl. Pour the fresh dressing over kale and toss until well coated. Add the pecorino cheese and continue to toss until fully integrated. Test for salt and lemon adding more according to taste. Top with fresh croutons or crisp bacon for added crunch and complexity.
    ✨Notes
    Kale can be prepared up to two days ahead of time and stored in a ziplock bag with a paper towel to absorb moisture.

      I'm sharing your videos with my friend her husband is a pilot they live in the Bay Area Castro Valley ca, and your home and aesthetic is very similar to theirs! She's also slender, tall with long blond hair!

    Hi Lisa. I discovered your beautiful channel last night and subscribed. I make a very similar salad dressing. I've been making my own dressings for years. I love changing up the oils and vinegars, and living on the east coast, I sweeten my dressings with a little maple syrup. I look forwardto trying your kale salad. And like you, I've got my herb pot garden started. I'm looking forward to catching up on your videos!

    Quick question? I deal with several food allergies. Can garlic and be substituted with something else?
    And do you know of a less acidic vinegar I could use for this dressing?

      Great questions Roxanne! A classic vinaigrette would have finely minced shallots in place of the garlic, which is also delicious. As far as acidity, I prefer the proportion of two parts oil to one part acid for the very reason of cutting the pH of vinegar, making a more mild dressing. As a side note: keep in mind the garlic (or shallots) marinate in the dressing, which also calms the intensity after a couple of days, making a more digestible condiment.
