    CARROT GINGER SOUP RECIPE ⤵️
    Servings: 8
    Time: 35 minutes
    ✨Ingredients
    2-3 T. Coconut oil
    1 medium brown onion, small diced
    2-4 garlic cloves, minced
    3 pounds carrots, peeled and cut into large chunks
    2 quarts chicken broth, plus extra
    2-3 T. fresh ginger root, grated
    1/4 T. red chili pepper flakes
    1-2 T. Agave nectar (optional)
    Additions:
    Nut butter, canned coconut milk, coconut flakes, chopped pistachios/cashews/peanuts, chopped basil, lime.
    ✨Directions
    In a large soup pot, warm coconut oil over medium heat. Add in chopped onion and sauté for 8-10 minutes, until softened but not browned.
    Add minced garlic to the onions stirring for one minute before mixing in the carrots, until everything is coated with oil. Quickly pour in the chicken stock and chili flakes, turn up the heat to medium-high bringing liquid to a boil. Once boiling, reduce heat and simmer for about 20 minutes.
    Check for doneness by using a fork to pierce a carrot so it easily slides in. Stir in ginger, taste for salt and pepper, adding more to personal taste. If you like your soup a bit sweeter, squeeze in a tablespoon or two of agave.
    Once flavors are to your liking, remove pot from burner and carefully ladle small batches into a heat proof blender, making sure not to overfill and burn yourself. Pour batches into another soup pot and test for texture adding more chicken (or vegetable) stock to desired consistency.
    ✨Notes
    For added depth of flavor and added nutrition, stir in chunky or smooth nut butters or canned coconut milk. Top with coconut flakes, fresh chopped basil, chopped pistachios or cashews and/or a squeeze of fresh lime.

    When you said it was raining and your soul needed chocolate chip cookies... I can so relate. When its dark and gloomy and rainy, my soul craves hot biscuits right out of the oven dripping with butter! Ahhhhhhhhhhhhhhh Your videos make me want to do that 1% thing. Be kind to myself, but make tiny changes that improve the quality of my life. Wow, your grandparents vase is exquisite ! And the lavender is such an understated elegance. Love it. If I were your neighbor, you would find me at your backdoor every other day, asking to borrow a cup of soup! haha

    I just found your channel and am enjoying your content. I too, love to cook. I would suggest checking out a different way of cleaning and using your ginger. There are other methods that will create less waste. I look forward to more content!

      ​@lisaemeterio love your natural and easy going style. Quite soothing but also inspiring. Ginger: break or cut off the protruding knobby bits as it is diificult to get between. Use a butter knife or even a spoon to scrape the skin off. The skin is quite thin. Ginger is the root of a plant similar to turmeric. Keep the lovely videos coming

    Hi Lisa, I wanted to drop in and let you know that I made a pot of this soup and it’s soooooo good! I actually was able to get three dinners all together from one batch. I was able to get rather large chicken wings from an Asian market and cut the tips to eliminate any small bones. I did use one large bok Choi cabbage. I did make the won tons separately in some broth because my husband loves them but I’m gf. Regardless it was all so delicious and the green onions after. It’s better the next day but it freezes really well. I did add the agave as well and it does balance the flavor. Really happy that I can go to the freezer and find something healthy. We both love it. Thanks for sharing and good luck with your channel.
    Oops I think it posted my message on the veggie soup with won tons but don’t worry, I’m going to do this next and will let you know.

      Another quick note. A flavorful gf option for the soup is to pour it over hot sizzling brown butter cod! The recipe is on my Easy Summer Lunch video. (Just subtract the flour. 😉)
