Hanging Baby Back Ribs | Oklahoma Joe's Bronco

  • In this video I hang Baby Back Ribs in my Oklahoma Joe's Bronco. I used H-E-B Charcoal. To season the baby backs I used Kettle Freaks Pork Rub. Total cook time was 3 hrs. Every hour I would spritz the ribs with Apple Juice. The last ten minutes of the cook I placed the ribs onto the cooking grate and glazed the ribs with Texas Pepper Jelly Rib Candy glaze. The ribs took on a beautiful color and were more mouth watery with the added rib glaze. 4-25-2020

    Dude I've been picking at your TH-cam. Went out and got me one rack of ribs. I just use salt and pepper on mine and Spritz after the first hour then 30 minutes after that. After the third hours took the hooks off put the ribs back on the grates and put my favorite barbecue sauce on it and came out awesome. Forget the 321 method I like this better thanks for sharing

      At times you don't need the 321 method. It all determines on how your smoker cooks. When I hang ribs, I can have then done in 3 hours.

      @@MoesBlackGoldBBQ I was cooking mine at 245 to 250 and it held real good. I did not use a probe I was just eyeballing it. I let my cook for 4 and 1/2 hours but I could have took it off early. Thanks for sharing your videos looking forward to your next video

    I’m buying a bronco.. my question is have you ever burnt the end of a rack cause it’s hanging so close to the coals? I almost would want to cut em in half to keep the end being so close to the fire.. looks damn tasty though!

      I have not. Even when the end of the rack is like 1 or 2 inches above the charcoal basket. I have yet to burn food when hanging meat.

      It is a regular. I wish I had bought a pro. The Pro looks beautiful. Plus bigger than the regular.

      Do you ever get any burn on bottom of hanging ribs.

      @edwardmiskotten2380 I do not. I've hung plenty of ribs and hung a few briskets, and they never burned at the bottom. It's an amazing drum smoker.

    Bro I love my bronco I picked my bronco up at Walmart on sale for $184 back in February.
    Are you out in San Antonio or South Texas because I buy my ribs from HEB most of the time . Good Video though bro🤙🏾

      Its good. I haven't had an issue with it. It gets when I need it too and it can keep a low temp.

    Hey Moe. I haven’t watched all of your videos yet, but was wondering did you have to seal your Bronco around the seams to prevent smoke/heat from leaking out? I’ve seen some reviews online where people said they had to do that.

      Thank you for watching! I have not had to seal my Bronco. Its done a good job of holding the heat and smoke in. If anything always make sure all bolts are securely tightened.

      I've had to seal mine. Tightened the bolts and everything. I think each manufacturer does it differently. I've seen the cap on the bottom be a different method of unscrewing it compared to others.

      Was yours leaking a lot of smoke? Here and there I will have grease leak from a bolt, but for the most part it does great with out leaking smoke.

    Did you remove the silver skin on the underside of the ribs I was only wondering because I have an Oklahoma Joe and it kind of worries me that the ribs will fall apart hanging

      I didn't but other times I have removed the membrane and I had no issues hanging the ribs.

    do you think those hooks/hangers are strong enough to hold briskets? just in case you were to cook more than one in the bronco?

      They are but you will need to use multiple hooks. I've seen it done before.

      I've seen 2 briskets hung but they were less than 10 pounds. I've seen them hung vertical and horizontal.

      I love hanging them. They cook better. I always keep the Bronco temp at 250.

      You can still spritz the ribs with your choice of liquid during the cook. Im glad my channel helped you on the decision to buy a Bronco. Hanging half chickens also come out great.

      I removed membrane all the way up to the bone where I hooked it. So where the hook is there is membrane

    2 questions
    1. You just leave the exhaust open completely through the whole cook?
    2. Did you just use charcoal or did you add some wood chunks for smoke flavor?

      The top smoke stack I left wide open at #4. I controlled the temp of the bronco with the air intake pipe. Yes I used charcoal and no wood chunks.

      Yeah I didn't want the taste of wood on this cook. I just wanted to have the taste of meat, rub and the rib candy glaze. To me what made the baby backs taste better was the rib candy glaze.

    Is the oklahoma joe bronco worth it?

      It is. Retail price at $299. Can't beat that for a drum smoker that can get you 15 hrs of cook time on one charcoal basket and not only can you hang your food to cook, but you can set your food on cooking grate to cook or bring up the charcoal basket to top level cooking grate and grill your favorite foods. It will hold temps where you want it to be. The regular bronco price is $299 for 18 inch or if you want bigger bronco it has price of $699 and it is 22 inch.
