    As a professional distiller I want to give you a tip. When zesting fruit you only want the peel not the pith. So none of that white stuck to the zest. The white gets very bitter (in a bad way). Makes world of difference even in "bath tub gin" like what's being made here. Alcohol's change when heated so I'd also suggest your users just add the botanicals directly into mason jars filled with 40% ABV spirits to macerate for 2 weeks and then filtering the botanicals out. My guess is that the taste will be better after macerating. Remember if the spirit is too bold, just mix some vodka back in with it to bring the botanical level back down.
    This type of gin has a name and it's called a compound gin, but often referred to as "bath tub gin". It's not popular as most people prefer a distilled gin that comes out of the still crystal clear. Close your eyes and drink it and it makes no difference. :) If it taste good, it's good!

    I have an eastern red cedar tree, tons of these blue berries. Still have yet to attempt making gin from them

    Wow!!! This was very interesting Ian. Personally I'm not a big fan of gin but I do love vodka. I imagine you can do the same technique and make infused vodkas. What a creative technique. Thank you for the wonderful video and recipes. Cheers!

    Question? Can I use my yogurt setting on my instant pot. It's temp is 106*-113* and use mason jars, just cook longer? My mind is reeling with the flavor possibilities!

      Thermostat and a pan of hot water. Regulate the heat to keep it the same throughout the process

      Ollie Mcc A dishwasher. Sounds crazy I know but simply add the botanicals to your bottle of grain alcohol (vodka) then screw the lid back on and add some extra tape then just run it through 1 maybe 2 cycles of your dishwasher.

    Vodka makes me sick but gin does not. How is this gin and not just infused vodka? I thought gin was vodka distilled further?

      Vodka. Vodka is vodka. For this purpose it doesn't matter.

    wow now I know why in some places "gin" tasets like flavoured vodka. I suppose you make whiskey by putting some bonfire ash in vodka? Do you make your own copi luvac coffee too?

      Gin IS flavored Vodka.
      Or we could say that Vodka is just tasteless & incomplete Gin.
