    I had no idea there was another type. Here in the UK, I've only seen the second one that you called Dutch (just called cocoa powder here). I checked what I have and they've got the potassium preservatives in it. Interesting!

    Cocoa processed with alkali is sodium hydroxide or caustic soda. Read the label

    Dutching takes too much of the nutritional boost out of cocoa powder.

    M.h either of these from Hershey's is what it used to be. They're absolutely distasteful. They almost completely lack the flavour of cocoa !. They're not the only brand that sucks either. I'm trying Ghirardelli right now, and it too, sucks just as Hershey's does. This is not what cocoa actually tastes like.

      Interesting. In what way? And what would you recommend using/doing? I don’t know if I’ve ever had the chance to try truly great cocoa yet

      ​@@cam5816 Raw cocoa powder taste a bit sour and similar to coffee, it isn't as chocolatey as dutched cocoa powder.
