Once I made Gamache with 100% chocolate and I didn't realise it was 100%. The Ganache split and was extremely bitter. I kinda panicked at first but then added some sugar and cream and kept mixing it while slightly heating it at times and somehow I was able to fix it. The consistency became smooth and also it was sweet enough to eat with a slight kick of bitterness that was pleasant.
