- Hello, friends! In this episode I am making Chocolate Cupcakes with Buttercream Frosting for Lizeth's birthday. Also included is a trip to the Mennonite General Store where we purchase colorful sprinkles for the cupcakes! Recipes are linked below:

Buttercream Frosting
1 cup (227g) butter, softened to room temperature
5 cups (about 500g) confectioners' sugar
1 teaspoon (or more) vanilla extract
Beat the butter at medium speed until it turns light and fluffy. Add the sugar and vanilla, and beat from low to high speed until the mixture becomes perfectly smooth. Add more vanilla and/or water to achieve desired consistency.

Your TH-cam videos made me want to live again! After my husband died suddenly, I had a severe heart attack followed by two surgeries to remove kidney stones! And ofcource, alot of bare trees woods lining the roads.
Typical of East Coast states at this time of year.
I forget that not everywhere has green grass and green leaves year round, like we do here in San Diego.

Oh, and just look at ALL of the full containers of foods and baking goods on the shelves at the Mennonite grocery store!!
Wish we had something like that here.
It's nice watching you make the cupcake batter, step by step. (I bet you will be going out and buying another cupcake baking tray soon!).
And every time I watch one of your videos, I always stop to let my daughter watch the parts of each of your videos showing your beloved pets!!
She loves animals too, like you Kevin, she is an animal whisperer.
You had to be fancy, Kevin, when you used the piping method to apply the butter cream frosting.
Couldn't you have just made the frosting in a mixing bowl and applied the frosting with a spatula, like most chefs do? 😁
Usually, the chefs only use piping when they are going to make designs, and flowers, and decorative borders on the cake.
All in all, it was a nice fun idea to have birthday celebration cupcakes.

When I make butter cream I add whole milk a little at a time to desired consistency and a punch of salt .. for Easter we made cupcakes for the kids and frosted them free hand and dipped the top of the cupcake in pastel Jimmies so that the jimmies covered all the buttercream.
