  • Homemade Crepes
    (Makes about 15 ten inch crepes)
    Ingredients:
    6 tbsp melted butter
    2 cups all-purpose flour
    2 tbsp granulated sugar
    1½ cups whole milk, at room temperature
    1 cup water, at room temperature
    4 large eggs, at room temperature
    1 tbsp vanilla extract
    Additional butter for frying
    Directions
    Combine the sugar, milk, water, melted butter, eggs, and vanilla in a blender or large food processor. Blend on medium-high speed for 10 seconds.
    Add the flour and mix until smooth about 60 sec.
    Cover the mixture tightly and refrigerate for 1 hour or overnight.
    Heat a non-stick skillet on medium then spray with cooking spray.
    Coat the pan with butter then place about 3-4 tbsp batter in the center of the pan and swirl until the bottom of the pan is evenly coated.
    Cook for 1-2 minutes, then flip as soon as the bottom is set.
    Cook the other side for 30 seconds until set. Remove to a large plate. Coat the pan with butter for each crepe.
    Fill the crepes with your favorite ingredients. You can use whipped cream, fresh fruit, Nutella, peanut butter, hot fudge or sweetened ricotta cheese. You can also use a savory filling like smoked salmon, cooked shredded chicken, mozzarella basil and tomato or pesto.
