This video is perfect for me. I am really surprised how many of these types of connected words are similar to Mandarin. I will watch this a few times to learn these sentences.
good question, Mostly they could interchange. But 但係 has a stronger tone than 不过. and 不过 is similar to however or nevertheless. eg. 你可以食蛋糕，不过唔可以食咁多 You can eat cakes. However, you couldn't eat too much 你可以食蛋糕，但係唔可以食咁多more strict） You can eat cakes but you can't eat too much.

good question, actually 嘅话 is like a particle for 如果, it makes the sentences sound better. It could be omitted but it sounds weird while it is correct grammatically
