There are thousands of characters in Chinese. But no all characters are used in daily life. Some characters or phrases only will be used in some dialects. 1. In Guangdong, we learn Mandarin(pronunciation&characters) at school but we speak Cantonese because of our mother tongue. And we watch TV in Cantonese and we can see the subtitle in Characters. so we know how we know which characters pronounce what in Cantonese. 2. I don't think we learn grammar through education. We just learn from life. Like, some English speakers who are bad in English subject, can still tell how to make a right sentence with right grammar 3.Though the TV subtitle is always in written language while we can hear it's oral one, we can know those special characters like"嚟；睇 ..." through writting notes with classmates or chating with friends online.

But if the shopkeeper just borrows you an umbrella, then you should say "唔该" because they just provide this service to you but not giving it as a gift. About the example you sent, it depends on what condition. I think you wont say 多谢你为我做嘅一切 to the shopkeeper and you won't imply your friend that does lots of things for you on purpose right? I hope I explain it right😄

we dont have 好彩 in Mandarin instead, we say "幸虧"
