Worked in an amusement park and every place that cooked food was way cleaner than 90% of the restaurants on this show. We cleaned every day, and deep cleaned on slow days like when it rained. We cleaned the fryers 2-4 days depending on how busy we are. Keep in mind we were mostly seasonal workers in school or from over seas and we took more care and pride than pros.
Yeah, same for carnivals, oddly enough. You'd think they'd be ratchety AF, but the carnivals I've worked, the food vendors are all deeply anal-retentive about their cleaning.

The very first Kitchen Nightmares UK was a lady who opened a restaurant in Paris on her father's dime, basically just for the larp of owning a Cafe in Paris. The moment in the show where Gordon needled her on whether she actually wanted to run a restaurant or not was pretty intense.

Sugar, I've been in restaurants for 15 years and I absolutely feel you on the cleaning! Even now, when I'm at a cafe and not a full restaurant, cleaning is what we do when there's nothing else to do. We have daily tasks and weekly tasks. We have a list. There's stuff we clean daily, there's stuff we clean weekly, and there's stuff we deep clean monthly.

And sometimes the only thing you can really do about it is to push in such a way that it's incontrovertible that there is a problem. For example, if you have cameras in the restaurant, make sure they have the ability to record audio. Have a sign on the front door saying you record 24-7 so it's not illegal. At the same time, anytime you catch them acting out, you show a video of that. I had an employee who was misplacing money. Granted, they weren't stealing it, but they were literally misplacing money around the office. And until I had video to prove, like, here's how much you're screwing up, you're obviously having some issues, just don't bring them to work and we won't have a problem. Eventually, had no way to fight not being fired. The only other way to get around the issue with family is probably to say that you don't want to continue fighting about this employee and if it means you would keep fighting over it you'd even consider selling your share of the restaurant since it doesn't really make you that much money anyway and it's not worth fighting with family
The reason places like this can stay open despite the cleanliness issues(this place isn't even the worst one you'll see in Kitchen Nightmares and Hotel Hell) is because of 3 things. First is health and safety codes are more lax in the US than in Canada, Europe, most other 1st world countries, and honestly even a bunch of 2nd and 3rd world ones too. The second reason is the people doing the cleaning will put off cleaning until the inspectors are about to show up then they'll clean so they pass even if just barely, and then go back to not cleaning. And the third reason is bribes. A lot of the owners are actually a lot more aware about what's going on then they make it look like in the show and are paying off inspectors.

I find it really interesting how similar the cleaning is for restaurants and arcades. I work at an arcade and the deep cleaning, standard cleaning and regular maintenance differentiate in a really similar way. Except instead of one day having a couple hours dedicated to deep cleaning we have deep cleaning tasks littered throughout the week with basically any slow shift resulting in one staff member behind the counter and the rest deep cleaning games idk I find it interesting.
You should look at Hotel Hell. It's less famous than KN, but Gordon sees basically the same stuff as on KN but worse. Like a hotel owner who doesn't let guests use the closet in their room cause it's full of her clothes. And then there's the stuck up hoarding nightmare that is the Juniper Hill Inn.
In total fairness, when they said "We though were buying a restaurant with a bar but we were buying a bar with a restaurant attatched" they didn't meant the location or its size or anything, they mean they thought they were going to be a successful restaurant that has a bar but they make all their money from their bar and not their restaurant.
Second time, requesting to see a reaction for Momma Cherri's Soul Food Shack. Sure, it is fun to see Gordon rip these delusional owners a new one, but I think this episode would make for a good palet cleanser.

This episode felt so weird. They really needed to address both the problem with the drunk son hanging out in the kitchen as well as their lack of a proper cleaning routine. Ramsay's team going through there once to clean up and renovate will only do so much for so long. After seeing him show the staff the freezer I thought it would just get shut down.
58:00 Yes. You do. If the business is failing, as a responsible business owner you *need* to get rid of liabilities. Someone who is at work high is a liability. Someone who chases away customers is a liability. It's good for the business, and it's fair to your *other* employees who show up fit to work and actually care about the their job and their guests. No one I have ever worked for would put up with someone coming to work high. You get sent home once, you get fired the second time.
Do keep in mind, that sometimes when employees can physically see how shit a work place is AND how often the lead is fired/replaced, it can be a huge reason to not pursue taking a leadership role. Why put your own ass and your home’s income at risk for a business you know will blame you for their laziness?
In terms of the staff issue thing you mentioned, it sounds like she's genuinely going to hurt the business. You should remind your dad that because she's had a hard life, it could be argued that she should be working harder and more determined to keep her place of employment. If he was a father figure like she's probably claiming, than there would be improvement vs like a steady line of shitty complacent working. People who've had hard lives are usually the BEST and most dedicated workers. They understand opportunity and don't squander it. IDK if you've tried that argument or not but eh figured why not type it out.

I attended an IOP (effectively semi-intensive group therapy) for a time. All of us were there willingly except for one person, and the difference was like night and day. He barely participated with the program and as a result gained nothing from it. Therapy requires effort.
I remember visiting a course in a school and getting sick in class one day. I tried going to the toilet but full on projectile vomited in the hallway. I cleaned it up best I could before going home, but I missed the spots on the wall. Anyways, after that course I did other things for five years before eventually coming back for another course. That wall still had traces of my vomit on it.

I hope he gets the self loathing that has to be incased in his psyche addressed, he clearly has deeper issues.
Just got to the part about firing people that need to be fired and how hard that is, sometimes, in family-owned businesses. Story time: so, my mom has been the manager of the same hardware store for decades. And the old owner kept a bookkeeper employed that he knew had been stealing from him for years, in the dozens of thousands of dollars, even after she f-d up the taxes of all the employees and got them in trouble with the IRS. Why? She was his best friend's mother-in-law, and if he fired her, she would end up moving in with her son's family, which no one wanted. She wasn't let go, until they were bought out by a chain, a few years ago.
Okay, so I have a story for her question about why they haven't been closed by health inspectors, as well. In college, I worked the 2am shift at a 24hr bakery. It never passed the surprise inspections. But then they'd be given two days to fix things, so they'd clean up just for the re-inspection, pass it, then immediately lower their standards again. I mean, this is a place where the boss wouldn't throw out moldy donut toppings, but just scoop the mold off top and keep using the same 5 gallon bucket of "german chocolate topping" for months, well after its expiration.

In regards to that ONE employee and your fathers way of treating her, if it was ANY OTHER manager and employee relationship, I would think they were having an affair. I hate to suggest that's the case, but looking as a stranger just seeing it for how it looks, he's gotta be getting "value" from her being around somewhere else. I've worked with many bosses who had special relationships like that and its sometimes more obvious than other cases. But, if that's not the case, and I do hope it isn't, you need to just fire her. Your dad should understand that shes not making moves to help herself move forward with her being coddled by him and not holding her accountable for her decisions and actions. I know I'm a new face/voice here, so I don't expect this message to be really taken seriously, but I just had to express my thoughts and feelings on that story.
I'm with you on the tablecloths. I mean, I think the booths needed maybe some touch-up, but were otherwise nice. Yeah, I get that you get more tables this way, but like, I love sitting in a booth, where I can get a bit more privacy. I do not get this weird obsession with making sure all tables are just generic tables and chairs. Personally, and this is just my own thing, I would've gone with a deep green for the tablecloths, cause if you look, the walls are red and essentially white, so with the deep green on the tablecloths, it brings it together with the Italian flags they've got elsewhere.
Alicia as someone who has had a hard life myself not going into details, she needs either guidance on how to work or she needs to be told shape up or you'll have to leave as having a hard life isn't a good excuse for being a sh!t employee. But you need to talk to you're Dad and tell him, he's not being a bad person for firing a sh!t worker despite her rough upbringing, you need to remind him he isn't the sole owner of the restaurant anymore you're a co-owner and if you have a larger share than him you tell him that you get to decide how the business is run since its you're future business and you care for his financial and emotional health as well as you're own, you need to tell him you don't want to fight him on this but if its hurting you both significantly financially, you may need to bite the bullet and give her a P45 (e.g. fire her) even if it means you end up on rocky terms with your Dad for a short while. But thats just how I would do it, you are your own person and you do whats best for you. I mean maybe there are adjustments that can be made to help her with work if she's struggling that much, but don't let you or your Dad be taken for fools ok?

But like you said, this is YOUR business that’s being effected by it, and by proxy, it’s also YOUR FAMILY that’s being effected. We all have our bad backstories. We all have our issues with life. But there is absolutely positively NO EXCUSE for choosing to be a pos employee! This girl is manipulating your father and is taking full advantage of his kindness. I work for a school During the student breaks we detail our area/sections. During the summer break 2 months we deep clean the building. Top to bottom. Walls,high dust, degum/clean all furniture, vacuum, then extract the carpets. Same with bathrooms but shower scrub the floor. Cafe degum/clean all Cafe furniture But if it has linoleum flooring strip floor and wax floor. Locker rooms oh that's fun and the first thing we hit. All lockers are open and we have to wipe inside and out "ALL" lockers While one does the coaches office, and 2 do the restrooms.
You know one thing I love watching these videos is that it’s doing great for my depression. I had to drop out of my masters program and I felt like such a failure, but looking at these people, I realize that I am nowhere near as much of a failure as these people. Who just starts a restaurant with no restaurant experience? Sugar.
You might not be a fan of the table clothes and chairs but keep in mind they're THE classic pattern for pizza places. The restaurant is an old restaurant so they went with a classic pattern in order to keep some of the feeling of how long the place has been around for rather then give it a modern look and it's still an Italian style pizzeria so the look is appropriate. Also this episode is almost 15 years old so you're using a 2024 aesthetics opinion when you need to be thinking about it from a early 2010 perspective. And from a classic pizza place and 2010 aesthetics perspective it's great. EDIT* Also keep in mind that they don't have an unlimited budget or time. The network allocates a certain amount of money for the renovation and they have to stay in that budget which means sometimes cutting corners and getting cheaper furniture. You'll see episodes where Gordon straight up says that he personally paid for things like brand new kitchen equipment and that's because the network just didn't give enough money for everything that needed fixing and replacing so he had to use his own money. And when it comes to time they usually only have 24 hours for renovations at most so the amount they can do is limited unless they really push everyone and get extra people for the bigger renovation jobs.

A cousin of mine runs a hybrid restaurant half Ukrainian half Italian. He has been running it since 2014. In 2018 he hired the craziest waiter you can imagine. After this guy did a few mistakes he was fired, the problem was that he kept coming in. At first he gaslight the shift manager that his hours changed. Later he only came in when my cousin was not in. My cousin called the cops on this one waiter a few times and he kept finding new ways to get back in. This waiter had a sign made with his face to call the cops if seen. The craziest thing that happened was 2 months after all his crazy stunts. He sued my cousin for 2 months of unpaid labor, the guy even made up records both on his phone and by paper. 3 months later it finally went to court and the judge shut it down within 5 minutes. Then this guy sued for racism and forms of discrimination. That also got shut down in the courts. My eventuality put a restraining order on this guy. A few months after that this guy shot up the restaurant hitting a few customers but not killing any. There was a police investigation on this guy but they couldn’t find any evidence until it happened a second time. The guy never up getting arrested but was deported back to Italy. The restaurant closed in 2020 to 2022 because of Covid. What happened in 2023 caused more issues. He still has been trying to reopen his restaurant.
13:00 I want to play a little bit devil's advocate here and say that maybe the owner put lemon or lime peel in the booths on purpose for the fragrance. They thought it would make the place smell like lemon-lime, because fresh peel does that. But they failed to take into account that it is organic material and it does rot after a while.

Chat's gotta learn that even if it's true that "having a traumatic backstory" doesn't justify bad behavior (and it IS true), that making one of the most OBVIOUS statements ever is unhelpful. I'm 100% positive she already knows that. Anyone with a brain knows that. The problem is when empathy comes into play, making it hard. I'm not an employer myself, but I imagine that when you know EXACTLY what the negative repercussions will be for the person you're firing, it can get very difficult to be willing to be that bad guy if you're a highly empathetic person like she says her father is.
One of my greatest pet peeves in cooking (if not, my GREATEST) is cross-contamination. It's cooking 101. Learned this basic knowledge in highschool, nothing hard about it. Watching so-called professional chefs constantly screw this up utterly grinds my gears.

This has obviously spiraled out of control and has become an industry in its own right, with all the glamorous and shady elements that come with it.
The maps in the Michelin Guide were so detailed, the Allies in WWII printed a bunch Michelin Guides so soldiers could use them in the invasion of Europe instead of making their own maps. It was a vital component to the D-Day invasion.

We have daily tasks and weekly tasks. We have a list. There's stuff we clean daily, there's stuff we clean weekly, and there's stuff we deep clean monthly.

And sometimes the only thing you can really do about it is to push in such a way that it's incontrovertible that there is a problem. For example, if you have cameras in the restaurant, make sure they have the ability to record audio. Have a sign on the front door saying you record 24-7 so it's not illegal. At the same time, anytime you catch them acting out, you show a video of that. I had an employee who was misplacing money. Granted, they weren't stealing it, but they were literally misplacing money around the office. And until I had video to prove, like, here's how much you're screwing up, you're obviously having some issues, just don't bring them to work and we won't have a problem. Eventually, had no way to fight not being fired. The only other way to get around the issue with family is probably to say that you don't want to continue fighting about this employee and if it means you would keep fighting over it you'd even consider selling your share of the restaurant since it doesn't really make you that much money anyway and it's not worth fighting with family

The reason places like this can stay open despite the cleanliness issues(this place isn't even the worst one you'll see in Kitchen Nightmares and Hotel Hell) is because of 3 things. First is health and safety codes are more lax in the US than in Canada, Europe, most other 1st world countries, and honestly even a bunch of 2nd and 3rd world ones too. The second reason is the people doing the cleaning will put off cleaning until the inspectors are about to show up then they'll clean so they pass even if just barely, and then go back to not cleaning. And the third reason is bribes. A lot of the owners are actually a lot more aware about what's going on then they make it look like in the show and are paying off inspectors.

I find it really interesting how similar the cleaning is for restaurants and arcades. I work at an arcade and the deep cleaning, standard cleaning and regular maintenance differentiate in a really similar way. Except instead of one day having a couple hours dedicated to deep cleaning we have deep cleaning tasks littered throughout the week with basically any slow shift resulting in one staff member behind the counter and the rest deep cleaning games idk I find it interesting.
You should look at Hotel Hell. It's less famous than KN, but Gordon sees basically the same stuff as on KN but worse.
Like a hotel owner who doesn't let guests use the closet in their room cause it's full of her clothes.
And then there's the stuck up hoarding nightmare that is the Juniper Hill Inn.
In total fairness, when they said "We though were buying a restaurant with a bar but we were buying a bar with a restaurant attatched" they didn't meant the location or its size or anything, they mean they thought they were going to be a successful restaurant that has a bar but they make all their money from their bar and not their restaurant.

This episode felt so weird. They really needed to address both the problem with the drunk son hanging out in the kitchen as well as their lack of a proper cleaning routine. Ramsay's team going through there once to clean up and renovate will only do so much for so long. After seeing him show the staff the freezer I thought it would just get shut down.

Do keep in mind, that sometimes when employees can physically see how shit a work place is AND how often the lead is fired/replaced, it can be a huge reason to not pursue taking a leadership role. In terms of the staff issue thing you mentioned, it sounds like she's genuinely going to hurt the business. You should remind your dad that because she's had a hard life, it could be argued that she should be working harder and more determined to keep her place of employment. If he was a father figure like she's probably claiming, than there would be improvement vs like a steady line of shitty complacent working. People who've had hard lives are usually the BEST and most dedicated workers. They understand opportunity and don't squander it. IDK if you've tried that argument or not but eh figured why not type it out.
also if he wants to help her he can't just like let her keep doing the same thing over and over cause its just like being complicit vs. helping her grow and prepare for working somewhere else. There's no life skills or growth then how is her staying there actually helping her beyond a paycheck?

I attended an IOP (effectively semi-intensive group therapy) for a time. All of us were there willingly except for one person, and the difference was like night and day. He barely participated with the program and as a result gained nothing from it. Therapy requires effort.
I remember visiting a course in a school and getting sick in class one day. I tried going to the toilet but full on projectile vomited in the hallway. I cleaned it up best I could before going home, but I missed the spots on the wall.
Anyways, after that course I did other things for five years before eventually coming back for another course. That wall still had traces of my vomit on it.

Just got to the part about firing people that need to be fired and how hard that is, sometimes, in family-owned businesses. Story time: so, my mom has been the manager of the same hardware store for decades. And the old owner kept a bookkeeper employed that he knew had been stealing from him for years, in the dozens of thousands of dollars, even after she f-d up the taxes of all the employees and got them in trouble with the IRS. Why? She was his best friend's mother-in-law, and if he fired her, she would end up moving in with her son's family, which no one wanted. She wasn't let go, until they were bought out by a chain, a few years ago.
Okay, so I have a story for her question about why they haven't been closed by health inspectors, as well. In college, I worked the 2am shift at a 24hr bakery. It never passed the surprise inspections. But then they'd be given two days to fix things, so they'd clean up just for the re-inspection, pass it, then immediately lower their standards again. I mean, this is a place where the boss wouldn't throw out moldy donut toppings, but just scoop the mold off top and keep using the same 5 gallon bucket of "german chocolate topping" for months, well after its expiration.

In regards to that ONE employee and your fathers way of treating her, if it was ANY OTHER manager and employee relationship, I would think they were having an affair. I hate to suggest that's the case, but looking as a stranger just seeing it for how it looks, he's gotta be getting "value" from her being around somewhere else. I've worked with many bosses who had special relationships like that and its sometimes more obvious than other cases. But, if that's not the case, and I do hope it isn't, you need to just fire her. Your dad should understand that shes not making moves to help herself move forward with her being coddled by him and not holding her accountable for her decisions and actions.

I'm with you on the tablecloths. I mean, I think the booths needed maybe some touch-up, but were otherwise nice. Yeah, I get that you get more tables this way, but like, I love sitting in a booth, where I can get a bit more privacy. I do not get this weird obsession with making sure all tables are just generic tables and chairs. Personally, and this is just my own thing, I would've gone with a deep green for the tablecloths, cause if you look, the walls are red and essentially white, so with the deep green on the tablecloths, it brings it together with the Italian flags they've got elsewhere.

Alicia as someone who has had a hard life myself not going into details, she needs either guidance on how to work or she needs to be told shape up or you'll have to leave as having a hard life isn't a good excuse for being a sh!t employee. But you need to talk to you're Dad and tell him, he's not being a bad person for firing a sh!t worker despite her rough upbringing, you need to remind him he isn't the sole owner of the restaurant anymore you're a co-owner and if you have a larger share than him you tell him that you get to decide how the business is run since its you're future business and you care for his financial and emotional health as well as you're own, you need to tell him you don't want to fight him on this but if its hurting you both significantly financially, you may need to bite the bullet and give her a P45 (e.g. fire her) even if it means you end up on rocky terms with your Dad for a short while. But thats just how I would do it, you are your own person and you do whats best for you. I mean maybe there are adjustments that can be made to help her with work if she's struggling that much, but don't let you or your Dad be taken for fools ok?

If this girl needs serious kinds of help, then what you can do is help her get in contact with professionals who can be there for her to help figure things out. Don’t let her be riding on training wheels her whole life. Take them off and let her find her balance so she can get things done properly. Who knows, maybe by doing that she’ll gain a better understand and respect for people like you and not be so rude or prejudice to others.

I work for a school
During the student breaks we detail our area/sections.
During the summer break 2 months we deep clean the building.
Top to bottom. Walls,high dust, degum/clean all furniture, vacuum, then extract the carpets.
Same with bathrooms but shower scrub the floor.
Cafe degum/clean all Cafe furniture
But if it has linoleum flooring strip floor and wax floor.
Locker rooms oh that's fun and the first thing we hit.
All lockers are open and we have to wipe inside and out "ALL" lockers
While one does the coaches office, and 2 do the restrooms.
You know one thing I love watching these videos is that it’s doing great for my depression. I had to drop out of my masters program and I felt like such a failure, but looking at these people, I realize that I am nowhere near as much of a failure as these people. Who just starts a restaurant with no restaurant experience? Sugar.
You might not be a fan of the table clothes and chairs but keep in mind they're THE classic pattern for pizza places. The restaurant is an old restaurant so they went with a classic pattern in order to keep some of the feeling of how long the place has been around for rather then give it a modern look and it's still an Italian style pizzeria so the look is appropriate. Also this episode is almost 15 years old so you're using a 2024 aesthetics opinion when you need to be thinking about it from a early 2010 perspective. And from a classic pizza place and 2010 aesthetics perspective it's great.
EDIT* Also keep in mind that they don't have an unlimited budget or time. The network allocates a certain amount of money for the renovation and they have to stay in that budget which means sometimes cutting corners and getting cheaper furniture. You'll see episodes where Gordon straight up says that he personally paid for things like brand new kitchen equipment and that's because the network just didn't give enough money for everything that needed fixing and replacing so he had to use his own money. And when it comes to time they usually only have 24 hours for renovations at most so the amount they can do is limited unless they really push everyone and get extra people for the bigger renovation jobs.

A cousin of mine runs a hybrid restaurant half Ukrainian half Italian. He has been running it since 2014.
In 2018 he hired the craziest waiter you can imagine. After this guy did a few mistakes he was fired, the problem was that he kept coming in. At first he gaslight the shift manager that his hours changed. Later he only came in when my cousin was not in. My cousin called the cops on this one waiter a few times and he kept finding new ways to get back in. This waiter had a sign made with his face to call the cops if seen. The craziest thing that happened was 2 months after all his crazy stunts. He sued my cousin for 2 months of unpaid labor, the guy even made up records both on his phone and by paper. 3 months later it finally went to court and the judge shut it down within 5 minutes. Then this guy sued for racism and forms of discrimination. That also got shut down in the courts. My eventuality put a restraining order on this guy. A few months after that this guy shot up the restaurant hitting a few customers but not killing any.
There was a police investigation on this guy but they couldn’t find any evidence until it happened a second time. The guy never up getting arrested but was deported back to Italy.
The restaurant closed in 2020 to 2022 because of Covid. What happened in 2023 caused more issues. He still has been trying to reopen his restaurant.
13:00 I want to play a little bit devil's advocate here and say that maybe the owner put lemon or lime peel in the booths on purpose for the fragrance. They thought it would make the place smell like lemon-lime, because fresh peel does that. But they failed to take into account that it is organic material and it does rot after a while.

I'm 100% positive she already knows that. Anyone with a brain knows that. The problem is when empathy comes into play, making it hard. I'm not an employer myself, but I imagine that when you know EXACTLY what the negative repercussions will be for the person you're firing, it can get very difficult to be willing to be that bad guy if you're a highly empathetic person like she says her father is.
One of my greatest pet peeves in cooking (if not, my GREATEST) is cross-contamination. It's cooking 101. Learned this basic knowledge in highschool, nothing hard about it. Watching so-called professional chefs constantly screw this up utterly grinds my gears.
