    Great video. I actually own this and out of the seven different BBQ's & smokers I have, this Masterbuilt Gravity Series is the quickest and easiest one of them all. Plus, the charcoal & wood makes for some delicious food. Thanks for the video.

    I thought of the same thing for wood. I already have splits for my offset, and today I cut some up for chunks for the new smoker... 🙂

    Great video. helped me a lot I just got mine (800) off of marketplace. I have no instructions nothing on how it all works no probes came with the smoker so I had to order 4 off of amazon (half the price than from Masterbuilt) but it did come with 2 large bags of lump and wood chips. Hope to smoke some ribs this weekend.

    I agree. Out of my 4 different grills, the Masterbuilt makes the best smoked meats, hands down.

    Welcome to the MB fold brother! I bought my 1050 eighteen months or so ago when they first came out. for anyone that reads my message he is spot on! I have smoked briskets to pork butts to salmon. Obviously, you have plenty of cherry wood for smoking, but if you want to try some other flavors then check out Kingsford smoking chunks. They carry a bunch of species. I don’t know if Masterbuilt fixed this on your grill, but I strongly recommend that you get a couple of interlock switches for the cook door. Because of the grease and the smoke in this area, that switch tends to gum up. I have replaced that switch twice. it’s easy to replace and the switch is only about eight bucks, but it is a slight inconvenience. Other than that The inner wall in the hopper where the hottest part of the charcoal sit has bulged a little. This has not affected the performance in any way, but it is a little bit of an eyesore when looking INSIDE the hopper. If I had to do it all over again with everything I have experienced I would do it without hesitation. In my opinion, this is the best grill under $1000.

      Look into LSS mods for these grills. That guy makes all kinds of stainless accessories for these. Including a stainless firebox insert.

    I have the 560. I've smoked and grilled all kinds of meat with it. It's a great smoker/grill. There are aftermarket stainless steel inserts that will help it last longer.

    I picked up a 560 for a $100 second hand and did one cook on it before flipping. I ended up soldering and bypassing all the switches. I can see how it could be a fun little smoker. My suggestion is to line the top of the chute with tin foil and sandwich it between the top of the chute and door. The gas from the charcoal rises and will try to escape out the top chute. The gas will eat away at the paint at the top of the chute. If you sandwich in some tin foil between the top of the chute and door it will help the paint from peeling. I do the same with my commercial gravity feed smoker. It helps protect the paint. I had to repaint the top chute of the 560 as the previous owner neglected to place tin foil between the two. Just a quick tip for you.

    My Walmart has this on clearance for $350. I want to say it's the version with the griddle, though I'm not sure that matters to me. Thinking of going back and picking it up now. 🤔

      I e been looking at some smokers for a while now and I’m very interested in the masterbuilt 800! I’m also interested in the camp chef series for the side attachments you can get for them.
      What’s the lowest the masterbuilt will cook at? And do you find that you would need a cooker that would go as low as 150f??

      This goes to 170 degrees and that's plenty low enough. I'd only use that low of temperature for smoking cheese or fish. I almost always smoke meats at 225 degrees.

    Currently April 2023 Costco’s in the Cleveland, OH area have a model 900 for 649.99. No griddle but it does come with the pizza oven.

    I have had mine for 10 months. I have used it probably a dozen times and only high temp cooking with the flat top griddle twice. I now have a hole the size of a quarter in the fire box on the opposite side from the exit port into the grill. I’m going to contact master-built and will see what they do. I suggest looking down inside from the top charcoal fill door and checking to see if anyone else is having the same issue.

      It's actually a common issue I'm afraid, according to masterbuilt that wall is sacrificial and only there for shipping purposes to hold back the fire brick material. LSS mods makes a stainless firebox insert of you want to tackle it.

    I bought mine back in July 2021. Best smoker ever! I think I'm the only one that paid 'full price' for it. LOL I ABSOLUTELY LOVE MY SMOKER!

    Excited for the cooking videos! This seems like a good option for me to consider. I've been thinking of getting a new grill for a couple years now; dreaming of an expensive kamado type grill with the hybrid gas option. This one seems great for convenience and price point. And like you, I dig the charcoal and wood combo. Might have to get both grills someday.

    No doubt it's a great smoker. I have a pit boss pellet grill/smoker and absolutely love it! Can't see me ever having anything else but always enjoy learning about different ways to smoke meat! Keep up the good work.

      Man, you ought to at least check these out when it comes time for a new one, I haven’t used it yet but it is an awesome idea and all around great features. And this is coming from a Pellet Grill/Smoker owner. This thing is supposed to hit 700* F in 13 minutes. My Trager does good to hit 400* on a hot day.

      I have zero issues hitting 700, we've started using it as a pizza oven since it gets so hot. Smoked pizza is amazing!

    I believe you have it backwards when you mention that the chunks in the ash basket will smolder. The wood chunks in the ash basket will fully ignite and create a clean smoke profile. (Similar to an offset smoker) When you place the chunks in the chute with the charcoal the wood chunks will sit and smolder and create a heavier dirty smoke. There is no wrong way but there is a difference in smoke profiles. I add wood chunks in the ash basket for the first couple hours to get a nice clean smoke profile. Anything more than a couple hours (Scientifically proven) the meat doesn't really absorb any more smoke. So I'd hold off on wood chunks in the ash basket or in the chute to save yourself some wood after the first few hours. Just a few tips I've learned throughout the years.

      I've yet to be able to get wood to ignite in the ash pan, even with a 10 hour butt cook. What I am doing now is lighting charcoal in the pan before I start the grill, I thin put wood chunks directly on those coals to get ignition. The fall down of ash has never been enough for me.

      @@TKCL That is strange. The sparks from the charcoal above should ignite the chunks of wood. Could the wood be too green yet? Do you start with a clean ash box? Maybe the ash acts like insulation.
      The wood chunks aren't going to turn into ash right away. The wood chunks will look like carbonized lumps of charcoal. (Similar to what logs of wood look like in a fire pit after awhile.) At that point they've been fully ignited. Your chunks of wood shouldn't be hard/solid after being ignited.
      The few times I used the 560 I started it with a chimney of hot coal and dumped it down the chute. (No firestarter) I then poured the charcoal in the bag over the pre-lit charcoal at the bottom of the chute. This might have helped get the bed coal going a bit quicker. I'm not sure if that would make that much of difference though as the firestarter you used ended up building a fire with flames.

      Your technique is probably the factor. My wood is two year old well season cherry. My cherry wood is usually seasoned in 6 months.

    Glad you are enjoying it! The gravity smokers are very interesting. I however have a 20X42 Lone Star Grillz offset for my big cooks(will hold 4-5 briskets, 10-12 pork shoulders. I also have my tried and true Weber Kettle. It has a slow and sear insert and a Spider Grills Venom controller. Can run for 8-10 hours at a steady 225-250. I too am not sold on pellet smokers. Looking forward to seeing all the great food you cook on it!

      @@TKCL Sounds good! I am sure it will be great. I ordered my offset before we moved to our 8 acre property with a legit shop. We did move before the offset was ready for pick up(fabricated locally-2 hours away). I was glad, because I did not want to have to move it from one house to the other. Weighs 550 lbs.

    i own 2 MB 560s. love them. i do not like lump in mine, way to many bridge problems . other then that i love it. also they wont work in sub zero temps.

      I've been curious about the lump bridging, but so far zero issues. Sub temps won't be a a issue for me in Florida 😉. I used mine again last night to cook 15 ribeyes at once for a large crowd we had over.

      Yes, make sure you cut off the fan and install both slide in dampers or the charcoal will continue to burn all the way through. Enjoy!

      @@TKCL So once the slides are back in, the charcoal/wood in the hopper will not burn? Because I was wondering how much fuel was to be put in the hopper for like 2,3,8 hour cooks.

      I still do enjoy it and have no plans to get the new model. I've actually started custom building my own cookers that run off of wood and charcoal we produce here. I'm more passionate about that since I love creating.

    I won one of these in a raffle :) I don't like the idea of using charcoal, it is toxic with chemicals in and on it. Is it possible you use all natural wood? no toxic charcoal.

    i have a question. I thought meat only accepted smoke up to about 140 internal...so how do you figure when to stop using any wood chunks in the loading process. I have previously only used a masterbuilt electric smoker..so after so much time using the chips, I've just let it run on the heat.

      The rule is around 145 external when the meat seals and is no longer as porous for the smoke. That temp or higher is usually when I'll wrap and run the heat up with just coals. Or you can move to an oven.

    Great video brother ... I have a 560 and 1050 and love them both with all of Lukes mods on both, but went with 'Joe's Grill Grates' for my racks ... did your 800 come with the rubber wheels or did you add them, if so, where did you get them

      The Costco version comes with those Wheels, different top racks, and a rubber handle on the lid.

    Now you need to make your own lump charcoal. Although it does burn faster. I light my smoker with lump but switch to just wood after that. ( Mine is a cheap off set fire box that takes a lot to heat... Crap steel construction)

    Do you load just enough charcoal for the current grill/smoke and it all burns or is it like a pellet grill that you can shut it down and the unused pellets (charcoal) just remain in the hopper? Thanks for the video that re-enforced my Costco buy (with the pizza oven accessory).

    Always have ran a Traeger. I like this idea of this but concerned about craftsmanship/reliability/CS. Traeger If a part fails a new one is on my door step 1-3 days later. Easy to stock up on parts! Do you still find the need for a propane grill?

    I have the 800, and I do like it. I have the SS firebox mod as well. However, the switches are troublesome, and the app is glitchy. I would try the Chargriller or something else next time.

      If the switches start acting up, I'm bypassing them. Those are not needed safety devices in my opinion. I am looking at the stainless accessories myself.

      @@TKCL , I agree, I am going to bypass them as well, the one I do like is the one for the lid, that shuts the fan down when you are working in there. That is kind of nice and would be annoying to not have.
      The SS mods are nice, but the firebox and vent mod are the only truly necessary ones imho.

      I really like the manifold top with a place to add drip pans. That's a must have mod for me, I've already had one grease fire.

    What are the times to start the smoker if you use one square versus two squares?
    Or what’s the reason you recommend two squares to start?

      It lights more coals and gets the smoker up to temp a little quicker. I usually let them burn for 2-3 minutes then kick the fan on.

      I don't consider the racks upgraded on other models. The Costco model also has nicer wheels and the soft touch rubber handle for the top (I like that). The griddle is a waste for me, I have a built in 36 inch blackstone in my outdoor kitchen. I'm happy with the discount I got over the Walmart and Home depot models.

    We just bought our series 800 and used the charcoal from Costco but we noticed it creates a lot of ash on the grates and food. Why is that?

      Charcoal is always going to produce ash, however I don't see it like you are describing. Try using a quality lump charcoal or a name brand briquette.

      That's the awesome thing about the bin on the side, shake the screen aboove and let it fall into the hopper. Pull out and dump. I'm not personally seeing a buildup inside the grill after about 20 hours of use.

      Been a while since I tested that, I want to say it was 10-12 hours, maybe longer. I did a all night brisket on it and only had to fill it once for a 17 hour cook.

    I’ve been considering this exact model. I do like the pellet grills but the problem is I change the way I eat and at this point most of what I’m grilling I’m going to be cooking pretty fast and not doing long term smoking and oh my God the pellet grills don’t get as hot as this for searing and You can get decent smoke out of them but it takes time so for a brisket or ribs or some thing you’re going to have in there for hours you can get good smoke flavor but with charcoal you get that Al Carbone flavor in that smoke flavor and stuff that’s not gonna be on there for hours. Another issue was the cost of beef. I don’t eat very much pork on the things I really wanna grill we’re going to be the beef ribs and the brisket and at this point that’s become so ridiculously expensive that I just wouldn’t do it very often and it just seemed a lot to spend for something I wouldn’t use very much.
    Absolutely love the Wi-Fi settings, it’s so nice to just be able to control everything from an app and set your timers and not have to deal with stuff. Lol. I know that’s lazy but I still like it and you don’t have to use it if you don’t want to. Lol.
    That’s the sad part about changing my diet. I study nutrition intensely and learned exactly how to eat and in doing that I’ve kind of narrowed down what I eat and really most of what I’m grilling now is going to be steak or salmon and I can do that in a $40 charcoal grill so I just kept putting it off. I love it but I don’t really need it and the money I put aside I decided just to put into an AR. 😂 I might get one eventually but at this point with moving and being stuck here for a few months because of flipping houses I just don’t wanna deal with it but this is exactly what I was looking at after tons of research and because I love the flavor of the charcoal and there are some things I like better about the wood pellet smokers but I would still do most of my grilling on a traditional charcoal grill so this was just the best all-around solution and really some of the best bang for the buck as well. You would spend at least that much on a decent charcoal grill and you get an actually good one he probably need to spend closer to 1000 or more and when I was looking these were I believe 799 at Walmart and Lowe’s and they have a great reviews and the customer seemed very satisfied and you just can’t get that searing heat from The affordable pellet grills and I think this is makes how much better steak or salmon or some thing quick it’s not gonna be in there for hours.
    I spent months in many many hours researching all the options and this was the best thing I could find for under about $1400 which has probably gone up now. People that have these love them and they seem to last a long time, I think you made a great choice

      I keep hearing crazy deals, like $180 end of summer deals at Walmart for the smaller version of these. Apparently you have to be at the right place right time to snag it.

      @@TKCL Definitely. I think the 800 and bigger had some advantages like you put in the video but I’d probably still get the smaller one if it was under 200 bucks. It would probably be enough for me, I think I’ll look around and keep my eyes out for a good deal since I’m in no hurry.

      Rec Tec makes a pellet grill that does sear and gets up to 700 degrees! 399.00 last time I checked! It’s also stainless steel.It’s called a Bullseye!

      @@robertthibodeaux4435 I loved the rec TEC grills but there a good bit more money and I’ve heard they’re now having them made in China which is a bummer because when they were made in America using good quality parts they were worth the extra money. But I seen some complaints on their build quality now and I haven’t verified myself but they said that they’re now produced overseas which kind of sucks. I liked the little round stainless one I think they called it a 380 come out that thing got up to something like 750° and it did it pretty fast and it was small but for doing steaks and searing that would be awesome and it’s still big enough to do some ribs or One brisket if it isn’t too huge but I really wanted that and the 1300 but rec-tec was at one time my number one choice in the pellet grills no but you’re either looking at getting a small grill or spending pretty huge amount of money and these seem to do a much better job of searing it and for the price it just did everything all the way around pretty well. Some people don’t like the flavor charcoal but I love it. If this wasn’t an option I would’ve try to get a rec tech 1300 and would’ve just gotten a charcoal grill for doing Quick stuff like steaks. And on the rec tech 1300 it did have a good enough temperature to see your butt it took a long time to get there so I probably wouldn’t have used it for that I would’ve just done charcoal grilling In that case but they were definitely among the top. pitBoss also had an option where they had a slide in there with the cave you direct access over the flame box on the pellet grills and they got pretty hot but then you have a huge mess to deal with and charcoal would just be easier than that as well. I haven’t owned one of these yet but it’ll be interesting to see how fast the heat up, but either way it’s easy and you can do one or both end this way you get that quick smoke charcoal flavor come up pellet smoke takes a lot longer to get into the meet so I need to spend time in there and a lot of people don’t like charcoal because it’s got some dirty smoke to it but I love the flavor. I’d still like a rec tech someday but if I found a good price on these this is still what I would probably get because it several hundred dollars less.
      The sad part is with the price of beef not many of us can’t even afford to grill much anymore anyway 😂😂

      I'm happy I still live in an area that has small food markets with butchers that run sales. I can occasionally get ribeye steaks for $6.99 a pound for example and I buy them in bulk and freeze until the next sale. Meanwhile everyone else around me wants $10.99-14lb for ribeye. Costco, Sam's and Save A Lot often run good deals on beef too.

      It's not exactly like straight wood smoking. But it's an awesome flavor mixed with charcoal. I love a very heavy smoke flavor, I can control that better on a traditional smoker. With that said the food is still awesome off of this grill.

    Help! I want one of these but I am torn, I seen the huge savings at Costco and was ready to buy (no big deal about the griddle) BUT some of the reviews I read said that they had called Masterbuilt with some of the issues they had and customer service admitted that the Costco versions were built a little cheaper (material) and that's why they can pass the savings along. Is this true? any input.

      That's the first time I've heard that one. The cheaper build is no extra manifold inside for the griddle, no cast iron griddle and no formed bottom shelf to hold the griddle. The warming racks on the Costco model are a little different and coated, I like them. The Costco model also has better looking wheels and a rubber coated soft touch handle that I prefer. If anything both of those items are upgrades over the Walmart version. The hopper, controller and all working components are the same that I can see.

      Hard to justify a griddle for $300, not sure what you paid for yours. You'd be better off getting a blackstone. I think mine is very efficient on charcoal, I see no need for the back damper. I'm not going to mod it right off unless I see the need.

      I did use this on one extremely windy day, I was trying to smoke it to 225. I felt like the wind always kept me about 10 plus degrees higher than set point because it was stoking the fire. That's the only time I've seen less than five degrees temperature control.

    It looks great, but please don't smoke the food too often, check up the relation of smoked, charred meat and bad, very bad health issues. Especially since you don't eat enough fresh veggies, LOL p.s. skipped a couple videos lately, our apartment is getting renovated snd had to move out, but will catch up😀
