The Mandalorian - Pit Reveal. First Thermostat Controlled 500 Gallon Offset

  • Joey Victorian of Victorian's BBQ took delivery of his custom built 500 gallon offset smoker trailer from M Grills. This smoker features a thermostat controlled damper system just like our large capacity commercial smokers. This set up will allow you to run our offsets as traditional stick burners or load them up, set the thermostat and let the auto damper control temps for hours. It's perfect for this times when you need to get away from the smoker or get some rest when you are a one man crew. We all love throwing logs on wood on every hour or so and being in control of our pits at all times, but lets face it; there are times when we need to break away. We are still burning all wood so need gas hookups or electric fans. This smoker is all 100% draft driven and just gives you that added assistance when needed.

    Very nice unit, and my man get yourself a Helper it will be worth it I had a one man bbq food truck until one day I realized I was losing money because I couldn't get to everyone's needs. Try and find a passionate cook that you may be able to train. Good luck and keep going forward. DarrylK

      @@thenickrodriquez We have been extremely busy with manufacturing our large Big M Smokers, and released a video on those recently. We have yet to have a chance to make a cooking video with our offsets since the customers are scooping them up so quickly. Once we get caught up with orders, we plan to build one of these for ourselves to shoot content on. Right now things are just too crazy to do so.

    I need more Info than that. Like how is it automated? How does it work? And maybe a walk through. Cool pit but don't really know what the purpose of the video was if it didn't explain or show these things.

    Being automated, how long can it hold temp/fire before having to put more wood in?

      5 to 6 hours. Longer if you get a really good bed of charcoal going.

    I'm looking at getting some info on either this one or the big M you mentioned as I'm am getting ready to open a brick and mortar spot and wanna do something different then mill scale or primitive not that they are bad just want to go different route do you have an email I don't do any social media

      how is that? You can smoke as a traditional stick burner and not use the damper control anytime. But at times when you need to get away from the smoker and leave it unattended or simply get some rest; it's perfect without sacrificing the flavor profile of the food.
