Dieses Einheitliche Grau gefällt mir gar nicht. Auch die Aufnahme für die Kanone ist schlecht gelöst, da hätten sie einfach das Formteil wie beim Afrika Korps Panzer 4 nehmen sollen.

Is it just me?: COBIs bricks look waaay to glossy and the smoothness of these bricks results in an uneven surface structure looking cheap to me.

Much of the look is also a result of my lighting setup. COBI bricks are not glossier or "cheaper" than bricks from other manufacturers. The only thing I don't like are the mini figures.
I recommend trying it out yourself :)

As someone that owns 25+ Cobi sets, I can confidently say that Cobi does not cheap out on their bricks. If anything, they are very durable and even have slightly more clutch power than LEGO. Though, LEGO had been doing way too many cost cutting for the last few years now so their drop in quality is unsurprising.
Another thing to consider, Cobi isn't shy on using "less than ideal" building... No illegal techniques of course, but they sometimes connect some large builds with just a few studs. In their F4U-4 Corsair for example, the entire wing section is connected with just 8 studs. These are very few and far in-between tho, most of their models are solid blocks of plastic that you can probably use as a lethal blunt weapon if the need arises.
