My copy of the book is singed at the edges, stained with turmeric and spattered with oil. Boy,have we had some adventures together. The Persian lamb with cream and almonds is off the scale.
More Madhur Jaffrey! I wish you guys at the old beeb would release old cooking shows on DVD, perhaps in a budget range.. there's absolutely no reason we shouldnt learn from these old programs. Especially Madhur Jaffrey is lacking on the DVD shelves.
Really? I thought to myself when she poured it in "WOW, that's GOT to be good"... I adore Coriander.. both the seed (I boil potatoes with coriander seeds and bay leaves - try it the next time, just a teaspoon of coriander seeds and three bay leaves - it transforms a boring old potato to something quite special, just like it does rice) and the plant... glorious stuff
I've actually cooked this chicken maybe 10 times before I just stumbled across this old video (I'mthe proud owner of a much used Madur Jaffrey Indian Cooking cookbook). Thank you for sharing this recipe even if I am six years late. I love simple but beautiful recipes that elevate an ingredient with good spices/cooking techniques and I am in your debt!
Madhur Jaffrey was the bridge the world needed to open peoples eyes to the culinary genius that is Indian food

30 years ago, Madhur Jafrey saved me. Her cocktail kofta recipe still delights guests.
