Potato and courgette stew from Mykolayiv oblast

This is something my grandmother Lyusya used to make and also my mum. They called it 'so-oose' - literally sauce. It is one of my most favourite Ukrainian vegetarian dishes... of all time. Make it before courgettes and marrows go out of season!
