Hi Kunihiro, I 'must' have looked at 10-different Gyudon recipes, and I settled on yours as my go-to. You caramelized the onions! I followed your recipe to a T, and yes, I even found beef belly, and used the grated onion technique. I cannot tell you, this was the best Gyudon I have ever eaten. The only change I made was, instead of using aluminum foil as a drop lid, I used a glass lid, from a different (smaller) pot that I had.. Holy mackerel, this was delicious! I only used 180gm of beef, (that was the portion my store sold), and I have left overs for 1-more meal. But I already cannot wait - to share this dish with friends and family. Thank you!

After several attempts, I've nailed your recipe yesterday. Half way through the bowl, I added a raw egg for extra variety in taste. Spicy togarashi, smooth yolk; hot beef and broth, cold egg. Chewey and slimy (in a nice way) - it's a perfect composition of opposites. I highly recommend

It's a good day when Kunihiro uploads :) It made me smile that I immediately understood how you were going to tenderize the meat, as they also used the onion enzymes to tenderize steak in the Chaliapin steak-don recipe in Shokugeki no Soma hehe. i'm glad you said "until relatively clear" when washing the rice. i once tried to wash my rice until the water was crystal clear and it never happened..i suspect that the swishing around the rice was maybe knocking off some of the surface of the rice so that there was always a little white...if i had kept at it for a thousand washes i wonder if all the rice would be gone 🙂
Yes, you are right. If you rinse it too much, all the deliciousness will be lost. And it becomes soggy and mushy. I also once washed it until water was almost clear. It didn't taste good.😢 Thank you so much for watching my new video. Your comment made me smile.😊

good that you explained about the beef cut and how to make it awesome. That is most important and I also wonder if we could use shank or some other cut with more tendons for that jelly feeling. What tendons cuts are best?
