Your recipes are great and your skill with knife is amazing. Since miso has beneficial enzymes should it be added after the other marinade ingredients are boiled? The cold miso will cool down the cooked marinade. Even though it is baked at 400 degrees later, perhaps enzymes can be absorbed into fish before cooking, and the final garnish will have the uncooked miso also. By the way, what brand of knife do you recommend?

You can use a frozen one too. But make sure to defrost completely and get rid of excess moisture before marinating it, otherwise, you will ruin the marinade. Thank you for watching my videos. Hope you enjoy.😊

The marinade goes with other fish too but I suggest shorter cooking time when grilling leaner meat.
