IMPORTANT ▼ ELECTRIC TOP NOTES ▼
    ▆▆▆▆▆▆▆▆▆▆▆▆▆▆▆▆▆▆
Electric stoves are not like gas, when you turn the Gas down it goes down instantly, when you turn the Electric from high to low, it might oblige you in the next 5 to 10 minutes, they just are not as responsive.
You need to follow my steps as the video but make the rice dance on a ring at it's highest level but then completely move the pot to a second ring that is "already" set to 2, so it is already cooled down, cover tightly for 10 minutes.
Leaving it on the high ring just won't work, it might as well be on high for the whole cook.
On my electric hot ring, I found 2 seemed to work best, for the same 10 minutes.. You may need to use 1 but I suggest as mine worked with 2, try it.

For some reason my rice wasn't quite ready after 10 minutes(maybe I didn't turn on the second ring on the stove early enough) so I did extra 5 minutes, but in the end it turned out fine and I'm delighted by the fact that there is NO RICE STUCK to the bottom of the pot! @@fixmix9857 Time-wise, it takes much longer with a rice cooker (usually more than 40 minutes). With some rice cooker (like mine) I can set timer beforehand (in the morning) and come home after work to find cooked rice. There are many days when I come home after work and wonder if I should cook, the thought of 40 minutes at the very least often turns me to eating out. I can try to stay more organized and plan ahead, or I can try the method in this video and get rice in 15 minutes. Guess which is easier? :P

marie Savino Hi Marie, even with brown rich you are going to want a short grain rice that is a more glutinous, regular mid to long grain brown is not great for this.. Let me know how you get on..

Thanks for the video, I'm planning on making this rice to have with a katsu curry. I've found in the past that using this method you can make virtually any white rice 'sticky'. Draining the starch off before cooking seems to be the most essential step. However you may need actual 'sushi grade rice' with some added Japanese Mirin/rice wine to be able to make sushi rolls.

I tried to make onigiri- just a regular triangle onigiri with nori without any fillings because I didn't have any- and it was my first time cooking sushi rice so I tried your tutorial, I was a bit scared at first that it'll be undercooked but it turned out very nice, just some rice got stuck on the bottom of the pot, so I'll add a bit more water next time. I made 4 onigiris and gave them to my parents and brother and me and they liked them :)

My rice turned out totally undercooked but I thinkthe pot I used might have been too small if that's even a thing. I didn't see rice "dancing" at the side of the pot but water was definetely boiling. So I just turned off the heat, covered the pot & left it on the stove with small heat for 10 minutes. After that the result was REALLY undercooked rice so I just kept adding water & it all turned into a disastrous watery rice. Gonna try again with a bit larger pot.

I was worried it wouldn't completely absorb but it did. I managed about 50 pieces of edible Cucumber Maki. now I'm going to take some to school tomorrow and share with my classmates!

Hey Steve! I love your channel! Maybe you can help me out though when it comes to Sushi rice since I'm so frustrated right now.
I've tried cooking sushi rice about a year ago, and probably cooked about 4 batches of rice, which all failed.
I threw away the sushi mat, and the rest of the ingredients and didn't give it another go until today.
So I bought two brands of sushi rice, looked up some tutorials online but also tried to follow the instructions on the rice.
Also I have to mention, we have an induction stove top. That means that when I turn the heat down, it instantly goes down just like with gas.
Before I go into detail, I cooked three batches tonight and all of them were undercooked. I threw way loooooots of rice :-(
I tried your method using the 10 minutes and equal amounts of water to rice. Way undercooked but very sticky at the same time. Like sticky outer grains but hard inside.
I tried cooking with some more water and for almost 15 minutes. Undercooked.
I tried cooking with even more water, and 20 minutes. Undercooked.
I have the lid on with a tea towel tucked in between, letting no steam escape.
Also I can't get the rice to dance in any way, it just starts to boil after a while but that thing you show doesn't happen.
I cook every single day, and I'm really not a bad cook to be honest ;-) Sushi is one of my favourite foods however, and we have only one restaurant here where we can order from and it's crazy expensive. All I want is to make avocado maki's but I just can't cook a "simple" batch of rice. How badly I wish they sold pre cooked sushi rice at the supermarket ;-)
Anyway, I guess I have to give up again, or just buy a 10 kilo bag of rice, and spend a day trying different techniques.
Or just get a rice cooker, which I hear gets the easiest results.
Anyways, I really do love your channel, and have used a lot of your recipes with great success!!!
    Hugs from Germany!

      @Steve-Owens  8 ปีที่แล้ว +2

+Boys & Bunting Thanks B&B, great comment, It's tricky, I have cooked with induction but not the rice. from my experience and induction will be very trick as it transfers heat very quickly to liquids but not solids, the warming up and dancing is very important.
I have to get my hands on an induction stove and give it a try but I am not going to be of much help until then, sorry. Somethings and induction stove does really well but rice just isn't one of them.
Good on you for the persistence.. Do you have a Microwave??

I heat my rice to a rolling boil. as soon as it boils, I cover the pot, reduce the heat to the lowest setting, and let it go for 20 minutes. For sushi rice i go for 15 minutes. Once the time is up, i allow the rice to sit for another 5 minutes. 99 times out of 100 that method gives me perfecr rice.

That happened to me last night! Three nights ago I followed this video (had done it before) and the rice was perfect. Went to make some more last night, followed the exact same steps and all three batches were undercooked but sticky. Hard inside. I didn’t change anything about the cooking process and it’s so weird that it suddenly stopped working for me. I have a gas stove. Even tried on different burners to make sure that wasn’t the problem. No idea how to fix it :( now I’m super turned off from making sushi

Mine usually turns out gummy 🥺 let me try this one I'm scared but hopeful
Edit: I tried it! It's actually came out so perfect and fluffy for the first time in my life. The only thing I think I messed up is my vinegar and sugar measurements so apparently for 1 cup rice it's 2tbsp rice vinegar & 2tsp sugar but I felt it's a bit too sugary for the vinegar. So I think next time if to 2tbsp vinegar to 1 tsp sugar.

I just tried this for the first time and it was so easy and I couldn't believe it when it turned out perfectly cooked and sticky. Just like at Japanese restaurants! For the people saying that it wasn't cooked I'm sure it wasn't sushi rice that they bought. You have to buy short grain rice (sushi rice). Thanks so much! This was the first thing I cooked while following a video that actually turned or good!
