I think you were supposed to remove it from the grill when it was 10 degrees from being finished. After a 5 minute "rest" it would have been cooked the way you wanted it.
I think that the red plastic got black because it is not intended to be on direct heat. The probe works better with food that is going to be cooked in indirect heat.
I got one of these and had for over a year now. Pull meat bout 5 to degrees 10 degrees from desired temp. Great probe in my opinion. I don't use the preset settings. I just go by what i think. Since ur a medium well guy. Id pull at 140 and wrap in foil for 10min. If u believe in resting ur meat or 144 if u just pull off and eat.
it's not uncommon for food to continue to get hotter for a few moments after being pulled off the grill, I take my chicken off at 160 and watch it raise to 165 and then I cut into it

You didnt match it with another thermometer to test its accuracy!

Had you read the instructions you would have known to remove about 10 degrees from the target and let the meat rest
Mine stopped recording correct temp after 1.5 years of use. I threw it out and would not recommend.
