Zucchine like this are great, usually I find that immediately prior to stuffing a quick sear of the "boats" in a very hot iron skillet, cut side down, adds an extra flavor dimension by giving some brown to the squash edges. It doesn't really cook them but they won't brown in the oven because of all the filling.
I started making it following the recipe at 4:15pm. It went in the oven at nearly 6pm and had to cool until 7pm. Delicious! Be sure to scrape out plenty of zucchini so the red sauce doesn't get watery. I skipped the egg and cheese inside. It really needs a salad and French bread to feel satiated. Nice video, thank you!

What would you substitute for the rice?
You could also add cooked wheat kernels / bulgur / couscous. Or Alternatively some breadcrumbs 😊

Great! The eggs are mainly there to help the filling ‘come together’. But they do add proteins and make the boats more filling as well 😊
