Chicken filling for moons/pies/parathas

Here’s the moon filling recipe with cubed chicken, it’s from my friend Nurina and it’s the only one I use ever since tasting hers.
1kg chicken, cubed very fine
1 large spoon ghee
Salt, to taste
4-5 tblsp green chilli, ground
2 tblsp ground cumin
1 heaped tsp crushed garlic
Cook the above, add some lemon juice half way through cooking. Keep aside. Once cook add 1 bunch chopped coriander.
Vagaar:
Half cup neutral oil
1 bunch curry leaves, chopped fine
2 tblsp mustard seeds, lightly cracked
Heat the oil, add the mustard seeds and let it start crackling, once popping switch off the heat and add the curry leaves.
Add vagaar to the chicken and mix well.
White sauce:
2 cups milk/freshcream
3 tblsp flour
4 tblsp butter
1-2 cups cheese
Salt, to taste
2-3 tsp green chilli
Melt your butter in a saucepan on medium heat, add the flour and salt. Mix to make a roux. Add the green chilli and slowly whisk in the milk or cream. Cook until thick.
Add to your chicken and mix well.
Your filling is ready. Use as is for pies, half moons, roll ups anything goes.
