Lemony Garlic Savoury Rice

This lemon rice though 😍😍 serve it with fish! So good. Ok serve it with chicken, and steak, and anything 😍

Wash and boil 2 cups of rice (any rice you like, tastic or basmati)
In a bowl add:
1 tsp salt
4 tblsp ghee
1 tsp pepper
3 large garlic cloves - finely chopped
Zest and juice of 2 lemons
1-2 tsp green chilli, crushed
1 tblsp preserved lemon paste - optional (leave out if you don’t have)
Keep aside:
1 sprig curry leaves
1 bay leaf - optional
1 onion, thinly sliced
1 bunch coriander, chopped
Spring onions, chopped
Any other herbs you like (dill or anything) - chopped
In a pot add your onions and wet mixture, curry leave and bay leaf. Sauté until lekker.
Fold in your rice and let it steam until completely cooked. Stir in your coriander, spring onions and any other herbs.
Serve and enjoy!
