65 years old and I had to google "Sous Vide" - never too old to learn, right?!! Personally I would call Sous Vide a water bath, which is exactly what I did after watching your video. You inspired me to experiment by placing the filled muffin tins into a larger cookie sheet and fill it with hot water before baking in the oven. 20 minutes at 300 degrees was a little short in my particular oven, so I added five minutes and pulled them out at three minutes. Waited 20 minutes before removing from the pan and - WOW - perfection!! The only thing I added to your recipe is a couple of chopped scallions along with the bacon and chopped pimentos - YUM!! And I used butter instead of a cooking spray to "grease" the muffin tins. They are absolutely delicious - better than Starbuck's and Trader Joe's - LOL!! Saving two out for the weekend and will freeze the rest. These will make a quick breakfast for those busy days ahead!! Thank You and GREAT job Tim!!

This can be made as individual muffin or as a larger pie size dish ( baked with other items) if you’re saving on energy. Base ingredients are eggs & cottage cheese You can add anything you like be that leftovers, Meat ,Vegetables, vegan, Personally I make a 1 large version when I’m cooking something else to save on energy. Im over 60 & was taught to make maximum use of my oven when cooking = Every part had to be used. Top, middle, bottom.

I use 6 egg yolks only, discarding the whites to another job. Add whipping cream and various meats...I've tried sausage bites, bacon, leftover turkey sausage slices quartered and my favorite cheese is cream cheese which has to be room temperature. I pour everything together whip with a fork and then after the egg in is the muffin tin, I add a chunk of the cream cheese in the center of the mix. That's the creamiest. I did try with artichokes; don't recommend that....way too wet! I never considered roasted peppers....I do know that a bit of shallots, lightly browned in butter is delicious as well. Make sure to pour the butter in too! Creativity abounds out of us all in non-stop fashion; it makes life exciting! Keep rockin' that kitchen!

You should either put a pan of water in oven as well or fill the empty muffin spots with water. It creates steam and creates moister bites. I bake them at 300 just till a bit brown (160 degrees) I've experimented using Canadian bacon with smoked Gouda.
Swiss cheese is the poorer man’s replacement for the much more expensive Austrian Gruyere, not cheddar, Monterrey jack or cottage cheese. Also, non-stick cooking sprays are FULL of chemicals that have been shown to contribute significantly to dementia. It only takes a minute to grease muffin pans with softened butter (10 seconds in the microwave if you didn’t plan ahead). I save butter wrappers in the freezer & just pull one or two out when I need to grease a baking/cooking dish.
I've watched many carnivore videos. You do better than most. Knowing cameras and having the right equipment must make all the difference. Congratulations

I've never had egg bites, Panera's coffee is outstanding. Love the idea of making these for breakfast (using your recipe, of course), and if they're a hit, then I shall make plenty and freeze them. Love a man in the kitchen. My husband's job was kitchen duty, breakfast. I always loved seeing him wear my apron. It just warmed my heart seeing you make your version of egg bites. If you dunk the jar in hot water for a minute or two, the air space at the top will expand again, and the jar gets easier to open. Works great for pickles. You could just run hot water over the top, but you risk scalding your fingers.
I made this yesterday and is terrific! My version, used 8 eggs, a cup of finely shredded gruyere cheese, about 6 ounces of ricotta cheese (in place of the cottage), chopped up prosciutto, and a dash of black pepper and cayenne, cooked at 300F for 30 minutes. I then cooled and wrapped, into the fridge. It is delicious cold this morning! Better cold than warmed up. This recipe is a keeper.
“Gree-air” is how you say it. I love Jarlsberg cheese. I like that brand of cottage cheese too when I can find it but my favorite is Daisy, it has no added starch. These look great.
I love my dash egg maker, and kinda add what I wish. I have made a similar crustless quiche in tin as you did, and love being able to prep ahead…… lol I also love making HB eggs in my Dash, and I peel them right away, and store them in fridge in a mason jar….. the simple HB egg is a great snack, salad topper, or easy for me to make an egg salad….. I and my sister care for our parents, and having these bites, and HB eggs ready asap, is a huge and special treat for them…. Your demo, and video have been wonderful. Thank you!

Hi 👋 Tim…I make something similar to this..I put all kinds of different healthy things in my egg bites..I really love spinach added…also I use a silicone muffin tin the release is easy with no spray….just a fyi..you could have just turned our oven off and left the egg bites in the oven to finish cooking…happy eating!
Looks delicious. I absolutely enjoy those egg bites from Starbucks as well. I don't get them regularly but I do treat myself once in awhile. While on vacation it's a special treat and that way we can drive up and grab some and get on the road faster to our destination. (That's my good excuse anyway!) 🙂I am going to try them and I do have the microwavable silicone muffin pan so I will test that out as well. Thank you for sharing this. My version for grandkids: take a muffin tin. Butter/spray. Layer a slice of deli smoked ham. Mix up eggs, cheese, peppers, bacon bits, whatever u want. Pour into ham slices and cook. 350° til done (20 min or so).. Very portable for the kids. I also like to put chive cream cheese in the egg mixture.
Made them this morning for my church Bible study group, improvised a tad and they were a hit! I even used the paper cups like Starbucks does but I actually sprayed them with canola spray and that definitely kept them from being so sticky. Thanks again 👍

Starbucks egg bites are my favorites but they’re expensive. I was so excited when I found them frozen at Costco…much cheaper and you can cook them in an air fryer in 9 minutes. Still 9 net carbs though…so Tim’s way is definitely better

I use spinach in mine and use a greased silicone egg pan and cook in the Instant Pot. Homemade is the best and cheaper to make than bought. I use bacon bits sometimes but the spinach and cheddar cheese are good by themselves with the spinach.
I admit I never had them but definitely tempted now. And I do appreciate your joy in them. That’s one thing I am focusing on is to finding joy in simple things in life. You really have inspired me. 😊

I’m not carnivore but have made these for years but haven’t added cottage cheese. I’ll have to try that. I use whatever cheese I have, frozen bell peppers & onions and add a little chopped spinach. I also add in more egg whites.
I've made egg bites with my Instant Pot. This was in 2019. I'd never heard of egg bites until I saw the Instant Pot recipes for them. The ingredients in the recipe were almost the same as yours, but I left out some of them (bacon and cottage cheese).

I use spinach in mine and use a greased silicone egg pan and cook in the Instant Pot. Homemade is the best and cheaper to make than bought. I use bacon bits sometimes but the spinach and cheddar cheese are good by themselves with the spinach.

I’m not carnivore but have made these for years but haven’t added cottage cheese. I’ll have to try that. I use whatever cheese I have, frozen bell peppers & onions and add a little chopped spinach. I also add in more egg whites.

I've made egg bites with my Instant Pot. This was in 2019. I'd never heard of egg bites until I saw the Instant Pot recipes for them. The ingredients in the recipe were almost the same as yours, but I left out some of them (bacon and cottage cheese).
I will definitely try this!
