  • Chicken Malai Tikka Recipe
    Ingredients
    For the Marinate:
    1 kg chicken (preferably boneless, cut into chunks)
    10 green chilies
    20 cashew nuts (kaju)
    1 tsp chaat masala
    1 tsp black pepper powder (golmirch powder)
    1 lemon (juice)
    100 gm yogurt (dahi)
    2 tsp garlic paste
    1 small pack of Delite cream
    1 tbsp Nutralite butter (or regular butter)
    For Cooking:
    1 tsp refined oil
    Salt to taste
    Instructions
    Step 1: Prepare the Marinate
    1. In a mixer grinder, combine the green chilies and cashew nuts. Grind them into a smooth paste.
    2. Wash the chicken thoroughly and add the ground paste to it.
    3. Add the chaat masala, black pepper powder, lemon juice, garlic paste, and yogurt to the chicken. Mix everything well.
    4. Let the chicken marinate for at least 2 hours (or overnight in the fridge for better flavor).
    Step 2: Cooking the Chicken
    1. Heat 1 tsp of refined oil in a pan (kadhai) on medium heat. Add 1/4th of the butter and let it melt.
    2. Add the marinated chicken to the pan and cook on low flame for 10 minutes, stirring occasionally.
    3. Once the chicken is partially cooked, remove the lid and transfer the chicken to a separate pot to dry it out slightly.
    Step 3: Prepare the Gravy
    1. In the same pan, add the remaining butter and the previously made ground paste.
    2. Mix well and add some water to the grinder to collect any remaining paste, then pour that into the pan. Stir to combine.
    3. Cook the gravy on high flame until it thickens and reduces slightly.
    4. Add the cream and mix it well into the gravy.
    5. Season with salt, chaat masala, and black pepper powder. Continue stirring on high flame until the gravy thickens.
    Step 4: Tandoori Chicken
    1. Heat a tandoori grill or tandoori net on high flame.
    2. Place the marinated chicken pieces one by one onto the grill and cook them until fully cooked and slightly charred. You can also use a regular grill or oven at high heat.
    Step 5: Final Assembly
    1. Once the chicken is cooked and slightly crispy, transfer it to the pot with the prepared gravy.
    2. Mix the chicken gently into the gravy on low flame to allow the flavors to combine.
    3. In a separate pan, heat a spoonful of butter until melted, and pour it over the chicken in the gravy.
    Serving:
    Serve your delicious Chicken Malai Tikka hot with naan, roti, or rice. Garnish with fresh coriander leaves if desired.
