  • BROCCOLI PASTA
    Preparation Time : 15min
    Ingredients
    Pasta Farfalle (boiled) : 250gm
    Broccoli (boiled, cut into florets) : 250gm
    Garlic Cloves : 4 to 5
    Basil Leaves : 15
    Walnut (handful)
    Cherry Tomatoes (Grilled) : 14 to 15
    Olives (chopped) ; 11 to 12
    Black Pepper (crushed) : 1/2 tsp
    Olive Oil : 2tbsp
    Mixed Herbs : 1tsp
    Pasta Water as per required
    Nutritional Yeast - tsp
    Salt as per Taste
    Method
    Fill a pan with water. Add olive oil and salt in it. When the water starts boiling, add the pasta in it. Boil until pasta becomes “al.dante” (boiled but a bit chewy) and strain.
    After straining the pasta, refill the pan with water and put it for boiling.
    Cut the broccoli into florets and roughly chop them.
    Transfer these florets into the pan with boiling water and boil. Add salt to it.
    Strain the broccoli and transfer it directly into a mixer grinder. Then add basil leaves, garlic cloves, walnuts, and pasta water. Grind until it turns into a thick green sauce.
    Cut cherry tomatoes into half. Drizzle some olive oil and put it for grilling.
    In a pan, add olive oil and heat the pan. Then add crushed black pepper in it and sauté.
    Add the broccoli sauce into this pan. Then add the boiled pasta in it and mix well.
    Add salt as per taste.
    Add some more pasta water and mix well.
    Transfer the grilled cherry tomatoes and slices black olives into this pasta.
    Season with mixed herbs. Finally add the nutritional yeast and mix.
    Finally your healthy broccoli pasta is ready to be served.
    Tips
    “Sauté crushed pepper in the oil, it will give warmth to the pasta”
