Is is superb my mother makes it in the same way. But one thing I would like to say while adding ghee and cardamom also add some nutmeg(jaiphal) it tastes fantastic in puran poli.
Amazing ..... but being a Maharashtrian we don't use this much dough .....we take minimum dough and maximum puran and this makes the real पुरणपोळी....and so this thing makes puranpoli making hard for beginners 😅😅....btw your recipe too was great 👍🏻
This is called "Obbattu" in Karnataka..♥️♥️ Very famous and is prepared in almost all functions...❤️❤️ We use Rava for the outer covering and only a little bit of maida and we cover it completely with oil and leave it for around 5-6 hrs... Meanwhile we prepare "Hurana" (the sweet/stuffing) with double the amount of jaggery i.e 2 cups of jaggery for 1 cup of Dal.. We add Toor Dal, grated coconut and illachi... Tastes amazing... My mom knows the detailed process.. I have only helped her 2-3 times.. So have written those things which I remember.. if there are kannadigas here, please forgive me if I have missed something.. I am a descendant of Indentured Indians who are from Bengal. Here I 🇹🇹 Trinidad we make a spicy dhall stuffed puri called dhalpuri. I must try this sweet version. I love dhalpuri and sweetened milk with sari,so puran puri should be great.
Wow, the round is sooo perfect. Love Maharastrian Puran Poli. We make the same in Bengal without sweet i.e. the salted spicy version (Mom's special), its called Daalpuri.
In authentic puran poli all purpose flour never get used. It's purely made with wheat flour. In seasoning cardamom, funnel seeds, dry ginger & nutmeg powder is must.
Holige is a Karnataka dish originally... Amhala nako shikavu tu... amchya dishes amhala mahiti kasa banvaycha te.... Holige... you people call it Puranpoli came to Maharashtra during Vijaynagara Empire.... Ataa Vijaynagara Empire kuthe ahe te Google kar hava asel tar....
Instead of jaggery I used dates plus Chana dal stuff. Same taste . But healthy sweet. For 250 GMs of Chana dal you can add 400 GMs of seedless dates mixime Daleke. Instead of complete maida we can take half atta and half maida. Process is same
Natural and healthy version of holige. Maida multi grain 🌾 atta or chiroti rava. Toordhal chana dal. Jaggery dates paste. Try to use very less oil.🛢️ While preparing holige.

My grandmother would make a chiroti Rawa and turmeric dough and it was very elastic. She would take a small ball of the dough and approximately double the amount of puran/hurna. She would then stretch and pull the dough to cover the whole puran. So her puran polis had no hard edges and were filled with puran. In fact they were so heavy that you had to lift them very carefully, they would break under their own weight.

In Karnataka we use maida also.
Poli in tamilnadu and kerala is made using maida. Minimal seasoning is used. The recipe varies from region to region.
