I will never understand the supposition that everyone in the world owns a 300-400$ machine primarily for the purposes of mixing dough. Even an okay stand-mixer is 150-200$.
I enjoy these videos because they make me feel better about my own cooking attempts when I try to follow celebrity chef's recipes. Josh often includes one or two ingredients that are either too expensive, difficult to find, or he's made them himself. And the final dish isn't always worth the money spent on ingredients like szechuan peppercorns or mushroom soup powder, which might never be used again after that.
The pricing by portion shit is also infuriating. I have to have a firm idea of WHAT i'm getting and i don't know a damn place where i can buy "byportion".
In case someone hasn't mentioned it yet, you soak the onions/green onions in ice water to make them crunchy. I'm not sure if there's any other reason, but that's what other cooks have told me.
The addition of Raclette cheese was a great idea. Since it melts so nicely, you can use up your additional brioche buns with the cheese (or just use toast). Add a slab or raclette cheese to it and microwave it for 1min 30s to 2min. Then you have a delicious melted cheese toast. You can also use it as parmesan subsititute on your pasta. You can basically use it as an all purpose cheese I'd argue.
12:40 Advice when you make these tall burgers just wrap them up in the paper like for sandwiches like General Ock does so it's much easier to consume! 😋 and yeah obv u have to cut it in half
Protip: You don't actually have to keep butter solid when mixing it into bread dough. You can melt it and mix it in at the beginning with everything else. Just make sure it's not so hot that you kill the yeast
Yes,the cheap trick to melt butter quick I found is to put the kettle on,let it boil and pour the hot water into a bowl. But your butter into a cup and then smack it around in the cup with a butter knife. The agitation really helps all the surface area of the butter hit the sides of the cup, making it melt faster. BE CAREFUL NOT TO SPLASH HOT WATER FROM THE BOWL. And like AMTun said, make sure it's not too hot for the yeast, let your softened butter cool down to room temp.
I am sure this channel will keep growing, it is well deserved too. I really enjoy watching these for the funny moments and just watching him try all these things. Trying to put this in the least insulting way possible: but I tend to be a bit too much of a perfectionist in the kitchen while following video recipes, especially when it comes to baking. Your videos serve as a reminder that if I don’t have a minor ingredient, an expensive piece of equipment, or didn’t do something exactly as the video shows, it’s not a big deal!, and will probably still turn out well, (or be a good learning experience even in the off chance it doesn’t.) That within itself has inspired me to try out recipes that otherwise looked too complex for my skill level. Remember folks!: Cooking is as much of an art as it is a science.

The reason you wash the onions is to remove some of the strong aromatics from the Onion (the stuff that makes people teary eyes), the stronger the onion smell/flavour, the more it needs to be soaked in water (if you dont like a strong onion flavour, I personally love it and caramelize the onions so I skip soaking them in water, but thats me and I know not everyone wants to do the whole caramelization thing)
