    *For those who are asking in the comments*
    *Shelf life* - Umaasim after 2-3 weeks, pero pwede pa namang gamitin sa mga recipes after that. Hindi mo lang makain nang diretso kasi sobrang asim.
    *Sour kimchi* - gamiting gulay sa sinangag, or kimchi stew. Pwede mo rin balutin sa kimchi ang karneng baboy (buong dahon na hindi hiniwa), tapos ilaga mo sa tubig na may kimchi juice, oyster sauce, toyo, at asukal. Many possibilities.
    *Glutinous rice flour* - can use all-purpose flour or any other flour as substitute. You just use the flour para dumikit sa dahon ng cabbage yung mga lahok.
    *Labanos pumapait* - iblend mo or you can skip it altogether. Better to use Japanese or Korean radish if available.
    *Patis* - best to use patis, pero kung wala, use toyo. Optional: add beef bullion or ajinomoto for extra flavor.
    *Kailangan bang hugasan yung cabbage after salting?* - Yes, otherwise masyadong aalat.
    *Substitute for napa cabbage* - kahit anong gulay na makapal. Green cabbage, bokchoi, pipino, Italian squash... kinikimchi ko rin ang green onion (pero if you make green onion kimchi, huwag mo na lagyan ng bawang).
    *Substitute for Korean pepper flakes* - sorry, wala masyado. Pero kung wala talagang flakes, you can use gochujang, pero labnawan ang flour paste, kasi medyo malagkit na yung gochujang. And just be aware na medyo maalat ang gochujang. Bawasan ng kaunti ang patis. Pero kung pati gochujang wala, use cayenne pepper, or dehydrated na sili (iblend mo sa food processor hanggang pino).
    When I make kimchi, I use green onion, chives, and onion. Minamarinate ko muna sa patis para magpawis, para mabilis sila maglasa sa sauce. Kung pambahay ko lang naman, I add perilla leaves too, pampapresko ng lasa. And some people add beef bullion para pampalinamnam. Wala na akong ibang gulay na sinasama. I also usually put more red pepper flakes than I can tolerate, kasi habang tumatagal siya at nagtutubig, tumatabang yung anghang niya.

    Tip lang po, need to wash again the napa cabbage about 2-4 times after 2 hours of soaking with salt. Sobrang alat po if hindi huhugasan. This also what I saw in other Korean kimchi recipes.

    Dear Madam,
    You should wash the cabbage before slicing into pieces that way some nutrients would not be washed away. Same is true with other ingredient.

    I tried this one today and ang masasabe ko lng po mas better na ibabad kahit 10-15 min sa water na may salt ung cabbage then rinse with other tub na another water for 4 times.

      SAme tayo ng procedure sini soak. Ko sa water ng atleast 15mins..and hndi ako gumagmit ng cornstarch for the sauce😂

    Baechu in Korea.
    and this cabbage originated in China, that is why some people call them Chinese Cabbage while people from big hotels call them long cabbage in contrast to round cabbage(repolyo).

    Note if gagayahin tong recipe♥️Hindi pala dapat karami nung roux... Siguraduhin na maramihan gagawin bago mo ilahat yung roux.. Akala ko kasi icoconsume lahat kaya pala parang masabaw yung gawa ko 😭😭😭

      Sa Pinas the best ang adobo sabi ng kaibigan kong Korean. Sabi pa nya yung mga koreano daw pag nagluto ng adobo, lasang ewan din. 😅
