You can use surface apperance on mesh parts. Doesn't work with parts. Also you use poly haven or any other website to get realistic textures.

Try giving it some materials inside of the blender shading menu (from polyhaven or some other websites)
Also i reccomend installing lily surface scraper and then learning what each node means and learning to make your own.

if you save a blender model as fbx instead of obj then it imports each individual object in a group on roblox studio instead of altogether in one model

This is not Roblox Studio, this is Blender! Roblox builders these days dissapoints me.
Yes. Even though I'm like them, I agree with you. But at the same time using Blender speeds things up and has a lot more things you can do than Studio. But I guess that's a chance for devs to use their imagination a bit more.
