      These food like everyone can try and enjoy, I figure souse, cow heel soup, not everyone international may enjoy, puffing and such. I would put saheena , I love saheena . I can’t believe I never had maracas bake and shark .

    Good job! Some things to add off the top of my head are: Breadfruit oil down, stewed meats/fish, calaloo, coo-coo, beans/rice, oven coconut bake, sada-roti and breakfast veggies, smoked herring, provisions, corn-soup, souse, saheena, katchori, all Trini-Chinese food, Trini-BBQ, all the local fruits, all the desserts like cassava pone, fudge, coconut and soursop ice-cream, sugar-cake, tolumn, rice cakes, all Indian sweets. In all honestly you can probably do a video on fruits, desserts, Indian/African/Chinese/Spanish descended foods in separate videos.

    Nice list, coming from a trini, it's a really good introduction to our food, would suggest you try our version of stewed chicken(made with burnt sugar) as well, and our pepper-roti which is a stuffed roti with veggies like carrots, potato, cheese and of course, pepper

    The legend of how "doubles" got that name is this: it's originally a street food brought over by Indian indentured labourers and was originally called "bara" (the fried dough shells) consisting of only one bara and topped with channa (chickpeas). Then one day a buyer at a popular seller asked for a "double" or two baras with the channa instead of one. This caught on and eventually everyone was asking for a "double" and the dish eventually became referred to to as "doubles". Many different sauces and chutneys (condiments/salsas) have been added over time from tamarind, mango, cucumber, coconut, pommecythere (juneplum/golden apple/ambarella), moolai (white radish), chilis etc. It's traditionally sold from a box attached to the front cart of a bicycle.

    Best thing about chow, is you can make it with anything from anytime of fruit(some don’t have to be ripe either). Pelau is sooo good. There are many types of roti my fav’s are dalpurie, bus’s-up-shot, pepper roti. Doubles, pholorie, aloo pie, saheena is a must try.

    To Mr Rockstar and other Foodies; the following points will clear all the mystery about Trinidad Cuisine:
    (1) The base recipe for "chow" is always the same (i.e. using shadon beni, salt and scotch bonnet pepper as seasonings) hence many versions exist because it can be made with almost any fruit or vegetable; fruits are typically chosen however and in a tropical island like Trinidad the number of different types of fruit is mind boggling (even among mangoes themselves there are dozens of varieties for example)
    (2) Chutneys are related to the first point; mango and tamarind are most available of course but not necessarily the most popular ones- on the island the some other common chutneys are pommecythere, cucumber, shadon beni, and roasted coconut, and they are all delicious and pair nicely with all dishes (including the street foods: doubles, pholourie, aloo pie, saheena, kachourie, baiganee etc. etc.)
    (3) For breakfast, "chokas" are often made. This is similar to chow in terms of one same base recipe with a direct flame roasting process, but for these dishes veges are commonly used amongst other things either individually or in combination of two or three different items (tomato, eggplant, aloo, eddoes, fish/spanish mackerel, avocado etc. etc.). These are then eaten with sada roti which is the most basic and common everyday type of roti. Sada roti is exactly what some folks call "naan" (dough toasted on a tawa or flat pan) but the dough can also be fried to give a second version that the local Trinis call "bake". The dhal puri and paratha on your list are two fancy versions of roti that are usually reserved for restaurants or for special occasion (basically any social event or Sunday meal). Lastly, steamed white rice can be used and is often used as an alternative to sada roti.
    (4) The island has a popular dish called "ground provisions" (yam, eddoes, dasheen, cassava/yuca, aloo/potato etc. etc.). Green bananas are also considered in that grouping for some reason mainly because it blends so well with the actual ground items. But anyhow 3 or 4 of the items mentioned are cut up into huge chunks, boiled and fried and served with some type of curry meat.
    (5) Some fun fact tidbits:
    - The cod fish that is used in Buljol dish on your list is called "saltfish" by locals and is actually incorporated into several other Trini dishes. There is another version called "smoke herring", but when speaking of fish-related food the "bake and shark" sandwich of course is one of the best things you can try.
    - Breakfast is not limited to chokas because we also eat a lot of eggs whether boiled or scramble or omelet style. The use of okra is also prevalent; the first way is to fry it with saltfish and have that with sada roti, and the second way is to add it to 'callaloo' which is a spinach-based soup concoction.
    - In addition to chicken, goat, beef and shrimp, you will see curry 'duck' on all the menus on the island and curry conch at some locations. However in any foreign restaurant specializing in Trini food; those two items are not easily available/accessible and hence excluded, but in the island they are very popular choices.
    - Trinis bbq or grill a variety of different meat/fish as well; and with the magical shadon beni seasoning being used, the end product is something superior to Jamaica's bland, dry, jerk offerings (which is unfortunately and sadly more widely known, but definitely not as good as Trini style)
    - Special dishes make their rounds exclusively during the Christmas season such as pastelles (corn meal based dough stuffed with common types of minced meats, rolled up in leaves and boiled/steamed), fruit/rum cake, 'ponche de creme' drink, hops and ham, sorrel drink etc. etc.
    - Out of the hottest peppers in the WORLD, several from the top 10 come from Trinidad (i.e. all of the 7-pot varieties and 'chocolates' and the moruga scorpion which has a "stinger" tail; the current No.1 Carolina Reaper which also has the characteristic stinger tail came about from experimentation by crossbreeding moruga scorpion and another superhot.
    Thankfully, the peppers are used responsibly by cooks so there is no need to fear. Most important is the making of "pepper sauce" which is found in every single home and restaurant; peppers are chopped put into jars with vinegar and lime juice plus bits of veges and put into the sun for some days to create an awesome pickle (it is used to compliment all of the main dishes as well and is something separate from the chutneys)
    -The Trini word for appetizers is "cutters" which is usually some sort of 'geera' style meat (geera = Cumin). But actually it can be any style of meat served with 'pepper sauce' (curried, fried, bbq, stewed). In local bars it is usually geera pork or chinese style roast pork, but as mentioned before the option for cutters are too many to list out.
    - Trinis street food vendors also prepare a wide variety of soups/souse, and common sandwiches geared towards tourists who refuse to venture outside of their comfort zones (Burgers, Hot dogs, Gyros etc. etc).
    - Asian/Chinese food is insanely popular and widely available all around the island; and those food options are extremely tasty and in a class by themselves. Other cuisines are fairly well represented as well (Italian/Pizza, American fast food, South American etc. etc.)

    Correction to #10: there are more than 2 types of roti popular in Trinidad and Tobago, some others are:
    Sada roti, a plain round flatbread similar to those found in other cultures worldwide, served hot usually for breakfast or supper with fried vegetables or meats;
    Pepper roti, two layers of roti with a center filling of vegetables, spices, fresh seasonings, cheese and sometimes meats, similar to a grilled cheese sandwich but with roti;
    Dosti roti, a very thin roti made of two or more layers of dough glued together by ghee or butter;
    Aloo roti or aloo puri, similar to dhalpuri but with aloo (potatoes), boiled and seasoned mashed potatoes stuffed into a ball of dough then rolled flat and cooked.
    Rotis are cooked on a "tawah" a circular flat smooth griddle made of cast iron or steel, an accessory in many households.

    There is also Callaloo,Soup(Cowheel,Oxtail etc),Souse(Pigfoot,Chicken Foot etc),Pigtail,Sada Roti,Fry Bake,Smokeherring,Fry Plantain,Tomato Choka,Baigan Choka,Fry Aloo(alot of other chokas),Aloopie,Sajeena,Baigani,kutchori, Dhal, Kitchiri,Fish Broth,Sugar cake,Tamrand Ball,Paw paw ball,kurma,gulab jamoon,rasgoulla,bharfi,toolum.
    Dosti Roti, Peas Roti,Pot Bake,pepper roti.Punches like Peanut,Fig,Seamoss,Soursop etc...Potato Salad,Beef pies etc
    Sooo much more for everyone to taste.

    Only one lil' miss. No.9 Pholourie.........it is yellow split peas powder, not chick peas flour.
    But overall, this is about the best video on describing Trini food content !!! The photos were top notch too ! All marks for you.
    And yes, I believe our food is among the best in the world.
    Trini food is seasoned before and while cooking. Nothing needs to be added when it is served...........except lots of hot pepper !!!!

    Note : there are 3 types of Roti in Trinidad.
    (1) Buss up shut
    (2) Dhal puri (sometimes aloo puri)
    (3) sada roti (sada = plain). Sada is probably the most commonly eaten. It's a staple breakfast food.

    🇹🇹 here and living in Oahu, Hawaii. Food here is bland or too salty and lacking variety (sorry....large populated opinion). I'm not a natural cook and I miss my country's food and culture. "All yuh mekin meh drool" 😋. A Trini food truck/restaurant would be a HUGE hit here. NO competition! Trini food is the best! To adequately cover Trini food, you'd need MANY more videos. Some mispronounciation, but thank you for your effort.

    Excellent list, we have many other great dishes here such as smoked herring with coconut bake, curried cascadoo with coconut milk and fried ripe tomato. As for the roti types there are more than two and one favorite is sada which is a plain flat bread served warm with your favorite choka which is a spicy dish usually made from fruits or vegetables which are fried or flame roasted. We also have three of the hottest peppers in the world and we love to make different condiments with them.

    There are Indians in TT which is why curry tastes like India. Almost half the population are Indian origin. Roti, pholourie, doubles pulao, curry goat all are originally Indian dishes adapted to TT. There are many different types of rotis-sada roti- similar to naan, dosti roti, roti stuffed with mashed potatoes/aloo paratha, roti stuffed with pigeon peas. You have only touched the surface. You will have to return to sample other dishes.

    The only thing that I have not had yet is the Bake and Shark. But her mom said she would make it for me, since no one else likes fish. But she does make curry fish ever so often and makes enough for me! Fiance makes the Pelau with orzo instead of rice and is superb.

    Awesome video, add callaloo to your list. Shadon beni is also known as Thai parsley, which can be found in most Asian markets/shops; leaves are bigger but flavours are pretty much the same. Culantro in Mexico

    Thanks for sharing your 👌🏾 perfect choices. Another favourite is Souse - which is almost like Buljol but with salted pig (feet/tails) instead of fish. Salt fish and crab calaloo is phenomenally tasty too and very popular.
