I'm curious to try this method. I use pretty much all the same ingredients for my edamame hummus (except for white miso instead of soy sauce), but I don't cook anything. The frozen edamame have already been blanched, so I just thaw them and use them as is, which has the bonus of making the hummus a vibrant green.
Very creative and all, but this dish has absolutely nothing to do with the original hummus. One look at the consistency and you know that this does not deserve the title of what I know as my velvety, shiny hummus. The only thing that makes this dish a hummus, is the tahini and the olive oil. Rather, I would call it a (Greek) fava.
What a shame to lose the bright green color. Use the MICROWAVE to cook and soften edamame. Same when sweating onions, garlic, shallots; but don't need to brown them: microwave medium heat covered with plastic wrap.
