I love how polarizing this video is. One thing for certain is this dish brings about STRONG feelings from everyone. Either you tear up or laugh and mock. Would love to try it for myself.
@@Ermac97 I seriously doubt some random chef on a random chef show has the classical actors training to conjure tears at will. So... in short.. go fuck yourself.
Scorched tomatoes add flavor you have to try it. I've been scorching my food forever just discovered Mallman few months ago. Love outdoors cooking every chance I get.
Hi, I would really love to train for Mallmann, he's an amazing chef and a very interesting human being. he captured my emotion when I first saw him on the episode of Chefs and he talked about his way of cooking and living, it's really inspiring. I was inspired to do more things and chase freedom and not to get bound into anyone or anything and just truly, fully, enjoy life. :)
Has anyone tried making this at home? If I started dipping ham in coffee on a Saturday morning, and burning tomatoes till they’re totally barbecued, I am not totally sure what the reception would be from Mrs Egret..
I tried something a bit different, but with similar flavors. I cooked leftover roasted ham with coffee, and the savory/bitter combination is indeed pretty magical.
+Henry Lu Mallmann loves to burn stuff, that's his thing. And for some reason people think that's fantastic. Personally, I am not a big fan of eating charcoal.
Eating burned food increases free radicals in your body, that can cause cancer. Vitamin C binds free radicals and can counter act it somewhat. Ideally you don't want to eat burned food too often, but do live a little. ;)
@@benthao4816 no i have not, i use coffee with meat, beef with a coffe rub is great but just boiling ham in this reduced coffee sirup i dont know. I mean Francis mallman does it so it cant be terrible
Sometimes Francis Mallmann pushes the edge too much....he turned from having high quality and sophisticated french style restos to this type of outdoor and simplyficated cooking....but he´s a great chef no matter what.
Simplified* I think he reached the peak of sophisticated cooking early on and it didn't satisfy him. You see the way he treats food now, it's like he's in love, truly in love with the simple way the heat pulses through and creates layers of burnt, crispy and soft without really messing with the food artificially
to people who must have a developed sense of what taste is, and rely on fringe dwelling experiences to discover new dishes and taste combinations, i can see how this is what they say it is. but to the vast majority of people this would be ash ridden, burnt, coffee soaked hell.
As Argentinian , i can't afford this kind of breakfast, first of all , that jam that is using is priceless and nobody here eat that at morning, our regular breakfast is Cafe con Leche (Coffe with milk ) and son toast with butter and jam or only jam , maybe some croissants with jam and cheese or just the croissants alone , maybe a sandwich, but thats all. i love Francis but this is just staged by him.
Sebastian Perez Well when asked in the video if it's a breakfast that people have in Argentina or just something he eats he says its just something for him. You're pointing out the obvious.
Se lo pregunta al principio y es exactamente lo q Francis le responde: q esa es su forma de desayunar cuando está en esos lugares, y no la forma de los argentinos. Y si no podés desayunar jamón crudo sos pobre.

I LOVE the way Ed's voice breaks from the emotions he's feeling at 3:44 regarding this breakfast. This is a guy that's passionate about food.
True, but he was also being dramatic for the camera.

"When I see a burned tomato, I get... excited."
beautifully said.

scorched sweet potatoes are the best
Nothing like some good carcinogens to get the cancer flowing
This looks amazing! I’ve watched this video so many times over the years. Never gets old
So much love and passion.
como siempre el gran Mallmann haciendo de las suyas.... un grande!
Absolutely dig this episode!!
Francis is the pride Of argentinian's chefs
Excellent breakfast 🍳♥️

Did you ever train for Mallmann?
did you?
"I've never seen anyone burn country ham and then deglaze it with coffee"
LOL
The next time I burn something while cooking, I won't say its burnt. I'll just say its done Francis Mallmann style.
Which basically means it’s burnt, so you’re back to square 1.
In Argentina we have the expression "Costra Mallmann"...Mallmann's Crust
I watch the whole series when it was on Netflix. It was incredible. These short videos while good , miss so much from the show.
bionicsjw hello, can you tell me the title of the series? thankyou
He has the plates I was raised on....Would love to visit!

I would like a fire griddle like that. How does one make one?
going down the comments wondering the same thing
Why do I see this china set so often? Even my mom owns it and we live in Texas haha
What is the point of the coffee exactly? I didn't get that?
Deglazing, and it adds bitterness to the gravy
lol to fuck it up even more
That ham and coffee idea is revelatory
Mmm.... Yeah.
lol @ the burnt tomatos

Burnt food isn't healthy! You can get Cancer from burnt food! So it's really dangerous!
If I ever decide to purposefully develop cancer, I would make sure to integrate this breakfast in my morning routine.
bovko I read your comments for the same effect.
stop being a little baby back bitch
Yeah because that's why the to get cancer ... please.

As much as I admire and like Mallmann, which I do, he go the tomatoes wrong
Naw man you wrong 😂
Telling that the shots of them actually eating it were left on the cutting room floor. 😏
How does he reduce the coffee
Boiling the coffee
I'm curious why so many talented chefs seem to idolize Francis Mailman. He just burns all of his food!
Burn
Francis Malman be recognized chef
Always better shut up
thats what he do, he is what we call here in argentina an "asador" a roaster/smoky chef
Because hes an actor, not a chef... watch how he cooks
Maybe if you look at his curriculum vitae you would know why.
u would have to try his food first to give an opinion. don't think u could afford it tho
I don't know how ham cooked in coffee could taste good
You must have never had red-eyed gravy then? Same concept

Coffe gravy is actually verry good on eggs, even without the ham, burned tomatoes are delicious! But not cremated ones like this😅
But how did it taste tho
Whoa this guy likes his bitter flavor.
Was he crying when he was talking about the ham?
Mallman ignores ED most of the time. They make a great couple though.
