Churrasco [Puerto Rican Skirt Steak]. The “Hidden” Medium Rare Technique!

- Let’s Create! Churrasco in Puerto Rico is in essence seared or grilled skirt steak. This is an Island favorite and skirt steak must be used for this delicious meal.
The steak in my picture are medium rare, but I applied a technique (after cutting them) to darken the meat without compromising the medium rare in it. You will have to watch the video for additional information. The reason I apply this technique is because many people in the Island avoid medium rare steaks because it “looks bloody” when served. I mitigate that initial impression with my technique. Ingredients are 💯 natural. I promised links for the following:

I went looking for PR Churrasco with Chimichuri and I found recipes with mint, oregano and parsley. I thought for sure it was cilantro or culantro… so I’m searching
Hello Jenny. Oregano is a mint by the way.
Chimichurri is truly an Argentinian ingredient (they also have more cattle than people) but because is sooooo good, others have adapted or tweaked it a little. Some in Puerto Rico skip the hot peppers (or use flakes) which is perfectly fine. Or skip the oregano 😮. Others add onions and cilantro (although many Puerto Rican chefs skip the cilantro, but some people add it).
But ALL must have garlic and parsley. Without parsley and garlic then is not chimichurri regardless of where is adapted. In my honest opinion, I think oregano is more essential than cilantro due to its flavor profile. As once again, oregano is a mint.
I keep it original (Argentinian) because it is perfect but people can tweak it. If people don’t tamper with ketchup or mayonnaise (none of which I like 😂) I might as well not tamper with such a perfect ingredient like chimichurri. But people can tweak as onions can certainly elevate chimichurri too.

Oh, that’s a different type of material. It is not the typical cloth. I tend to use brush too.
