I can’t wait to try this recipe and also I looked up your cinnamon bread recipe so I will make two loaves with one of them being cinnamon. I’m so excited because I just found a Bosch mixer just like yours on Offer -Up for $300. His mother only used it twice and it has a food processing attachment that’s never been used!! I think people forget how much the dough loves hydration. I don’t have a steam oven, so I use the next best thing. 😊

Looks like your warm water would be cooled too much by now. How do you keep it warm while you’re doing all the other stuff since you’ve not added your yeast yet?
That’s why I warm the water to 120. I typically have all ingredients at room temp and the fresh milled flour is also warm. 😊
I noticed you are getting your grains and other ingredients from new places. Do you have a preference for each of them? I.e lecithin, honey, sucanat, wheat berries….
I prefer to get my grains from places that verify glyphosate free. Ancient Grains and 4 generations are regenerative, sustainable and test for glyphosates. I have discount codes is you are interested. I also like that they have buckets and are co2 packed. I get my honey from local dealer which is BeeWell in Pickens, SC. I prefer to buy honey in a gallon because I go through it so fast. When I can get to Woodstock, Ga, I do stock up on items from Breadbeckers. I get my lecithin from amazon or vitacost (Now brand) I have a list on my amazon store front for many of the bread related items.
