    I know Farmers work super hard. Ive volunteered on a Farm Rescue Sanctuary several times. got up at around 6 :30 in the morning to feed all the animals with a friend of mine, clean coops, and even treat chickens who had bumblefoot. I heard their stories of how they where treated before they where rescued, and it felt good knowing that they would never go through the terrifying experience of a slaughterhouse. and did you know France has an all Vegan Cheese Shop? ❤

    Hi Diane. What a fantastic video. Very professionally done in line with some of the best documentaries I’ve seen. Consumers tend to think food stuff simply comes from supermarkets. The don’t realize the amount of work that goes into producing milk, cheeses, butter let alone chicken etc. Your channel is educational and fun which I’m sure makes production more difficult.     Oh la vache ! This is really a professional quality video. It's also interesting to hear this kind of French vocabulary. You could study French in school forever and never encounter the verb "traire" or the noun "la traite".

      la traite has two meanings : milking and trade (as in slave trade / traite des esclaves)

      There is a Wisconsin PBS program" Around the Farm Table" and a small dairy farm of the program director that makes only Cheddar cheese said they allow the calves to remain with their Mothers as grow faster and are healthier. This is a small natural operation and sadly not the norm in the US either.

    This video really resonated with me. My family here in the States have a dairy farm. I used to help my cousins with their chores and watched and waited while they milked the cows. So so sorry about the loss of your dear mom Diane 🙏🏻🙏🏻🙏🏻

    I grew up on a small farm in Missouri in the U.S. and we did have dairy cattle. To see a dairy enterprise this large was very interesting but also brought back memories of life on the farm as a child and teenager. One summer my mother and I teamed up to do the milking. I'm not sure why my father wasn't involved that summer; he had been diagnosed with skin allergies to cow dander and ground corn so that may have been the reason. At any rate, he had built a two-stall automatic milking rig and my mother and I had that process choreographed, both of us enjoying the efficiency with which we carried it off.

      @@OuiInFrance I discovered French cheese as a teenager on a school trip to Quebec ! Port Saulte has been my ultimate favorite since. I rediscovered it some 20 years ago at Whole Foods. There is a French Brie that has ruined all other Brie’s for me as well. I’m glad I’m not a drinker because I’m sure French wine would make me a snob!

A plate of pasta is not complete (or even worth eating) without a mountain of Pecorino Romano freshly grated on top. I eat the rinds when they are too small to continue grating.

    Wow. That was fascinating. I prefer 'fresh from the cow', unpasteurized milk. Does the farmer keep any milk for personal consumption? Or, is it all trucked to the dairy for processing? Thanks, Diane, great video.

    Very interesting that they have apprenticeship before they are called employees. And most farm workers do start at an early age (14 years old is about right)and also early in the day. What I did not know was that calfs get their antibodies from the cows milk, I always thought it was by shots. Can't wait for the tour of the farm. Thanks, Diane.

    I saw a really interesting video about a place that dated to the Roman invasion against the French guard. Julius Caesar gave his men some of the french property as a thank you.
    The people discovered that it was good to grow Anaïs seed. They made some candy there. I think that it might be around Lyon.

    This was one of my favorites Diane. The process is interesting. Do they sterilize the big hoses that they transfer milk through? Just wondered how often it needs to be done to keep out bacteria.

      HI Kim, I believe they sterilize them daily at a minimum (and possibly multiple times per day). They run a solution through them and everything is cleaned after the milking, including all the equipment, floor, etc.

      Yes it's cleaned regularly, and the cow's tits every time. Cows under traitement like antibio are milk outside from the tank. If bacteria, or contaminated milk is poor in the tank, all the tank is contaminated and can't be sell !
      And in some case the milk factory can put the farm on restrictions, penalty or even out them System. It's very very controlled, multiple testing.
      If the farmer is working for a label erea like AOC "filière Comté", he could be made out, and the milk isn't buy at the same rate, much cheaper.

      it wouldn't be pasteurized at the farm, the raw milk is brought via truck to a central processor that would do multiple farms' pasteurization (this is how it is in the US, my presumption is the same, although there is far more of a raw milk culture in France than in the US - but it wouldn't be done on site).

      @@staceyshinske3998 Correct, the processing of the milk is done at the factory. While raw milk is widely used for cheese making, 95% of the bottled milk sold in France is pasteurized (UHT). This is why milk in France is sold unrefrigerated in the grocery stores.
