I wanted 24 hour format, had 12h format. On the watch or in the app there was no option to set it. What worked for me was to go into system time setting on the phone, clock format, chose manually am/pm or 24 hour, as default was automatic on system language, when paired clock changes instantly.

@@MoroccanVenom it's a while back since I resolved that issue, it didn't happen again.
The key is to change the format to what you want on the phone, if needed or optional, set system time in the watch software to system, so it uses phone's time, date, language (and maybe keyboard setting to your language too) format of your choosing.
It will correct itself when you synch the watch to the phone.
