As sundown approached on another day in Barbados, by good friends Craig and Nerissa and I decided to go on a nighttime street food tour of Baxter’s Road in the capital city, Bridgetown!
This area is known for doing fish fries, so I couldn’t wait to have some. We saw a woman who makes some of the best fried fish on the road. She was frying up some marlin, which looked super fresh. It really looked amazing. She can also add fries, breadfruit chips, sweet potatoes, and plantain to round out the meal.

We had three different sauces, including pepper sauce and tartar sauce. The tartar sauce was excellent and wasn’t too spicy. The marlin was juicy and tender and lightly fried, and had some delicious spices on it. The bones were even easy to chew through! We also had some fresh coleslaw.
It came to 15 BBD, or roughly $7.50 USD for three pieces of marlin. What a deal! Then, we walked down the street, past another vendor selling kingfish, and headed to Bryan’s Bakery to have some cutters.
Cutters are sandwiches made from large, fluffy buns that look like giant hot dog buns. You can fill them with a number of meats, including liver! My liver cutter was amazing, full of flavor, and a little spicy. I loved it!
Then, we drove to a spot in town where they roast corn on the street on the side of the highway, but they weren’t there. Roadside corn roasters are a dying art in Barbados, unfortunately, as the number of people who do it has dwindled in recent years.
So instead, we headed over to Gap Burger, a local spot that sells burgers, hot dogs, pig tails, fish sandwiches, jerk chicken, spare ribs, and more! Craig told me I had to try a burger and the pig tails, which are a Bajan staple! We got two burgers and the pig tails, which came to 36 BBD/$18 USD.
We set up right on the truck of the car. The Gap Burger was like a small slider. It wasn’t my favorite beef patty, but I liked everything else in it, including the onions, cheese, and coleslaw. I added some of my David’s Been Here sauce to give it a spicy, tropical tang!
Then, we jumped on the pig tail. I was going to have it in Trinidad and Tobago, but they were always out every time I tried to get one. It was very fatty and meaty, and the sauce on it had a nice sweetness to it. It was similar to eating sweet baby back ribs!

Fry fish..done on wood fire in tire rim ...no wonder it tasted so good.... cole slaw...loaf bread with liver pigtails grilled .....and last but not least burgers with David's hot sauce...WOW...what a combo.. match made in heaven ...juat awesome. Your reactions eating the pigtails had me dying 😂. I always hear about these famous gap burgers but you didn't seem too impressed so...lol lol. My daughter goes "mummy he added pepper so that means it didn't taste all that good" 😂 😂

Same in Trinidad with the roast corn vendors, growing up there were so many along the highway from Central to South Trinidad. Now you barely see any.
Cuz the Caribbean keeps developing and becomes moreodernized which means some traditional cultural things are being lost. As a young person from Barbados I can tell u our generation shows no interest in a lot of the traditional stuff the elders do. So it's only a matter of time before it all dies off.
You should try Granny's in Oistins the livers and necks are worth the trip alone....but all the food good there
Good Ole Granny's Restaurant is legendary for its chicken necks, liver gizzards and Pink Star for its Cutters. Does anyone remember food Vender Gloria ,her fish was most delicious.

Hey David. Randomly came across your channel and love it. I’m American Guyanese so familiar with most of the foods you feature. Caribbean foods are flavorful and delish. Would like to know what you do to stay so fit. The Guyanese and Trini foods were high starch/carbs. Omg. The bread 🍞 on that liver cutter looks so soft. Would’ve wanted a little more gravy. Like you keeping it real re:the gap burger. Everything isn’t going to be delicious. I’ll pass on the pigtail. It’s like a rib? Don’t eat ribs either. Cook them for my husband tjough😂. David. Very nice. Not a lot of content in this one (truth be told), but nevertheless still enjoyable to watch. First of all, I had a good laugh when you put on the goggles. I was just worried that you might get too close to the flames and the 🥽 might melt in the heat. Thank God you kept a good distance away. The fish take away looked so delicious. It looked like pork chops. Too bad you didn't get the roast corn though. As for the pigtail: could have been cooked longer to melt off some of the fat. After watching videos of it in Trinidad, I realized how things have changed with this way of bbqing or grilling the pigtail. We used to use it in soups, callalloo, souse and in other ways. She probably didn't season the beef patties for the hamburger and that's why it wasn't tasty enough. But everything was so quiet. I hope you got out when it was really busy and crowded.
