That is because of 2 things, greed, and private property.
Most people in the world would not like their things to be basically "given away" to people, especially things they worked for.
And when a single person starts a revolution with the help of others (Lenin, Mao Zedong, ect..) They have the power to decide on everything the goverment does, most people who have done it have chose to implement a dictatorship, as they weren't even believing in what they did in the first place.

Socialism doesn’t involves their things being “given away”, infact it involves the fair re-distrbution of surplus value, so people will gain from it. (It’s not just the government eating your tax dollars)
This is why socialism cannot take place in an authoritarian system, it needs to be in a democracy so that the government is subject to the will of the people (the proletariat) so that autocrats, high-ranking bureaucrats, and dictators can’t exploit people.
