I was worried about going to china too Beijing was actually great, the food was tasty and people had good manners but I can't say the same for the some of the other places I went to in China. i wonder if its because Beijing is the capital and they have grown accustomed to tourist and foreigners settling there and having families that the are more accepting and understanding.

I was there at Terelj national park ger camp number 5!! Did you play with the wild cows? And everything you said is true, mongolian food is all MEAT (mostly lamb) and very tough. But terelj is so touristy that they serve veggies anyway.
so basically mongolians eat alot of meet because it is soo cold in the winter we have to be warm and if u went to a nomadic ger proper locals then u would have tasted real asf mongolian food
