    Great to see more folks covering the Stagg dripper :). I came across some other folks that would cut a tea strainer screen to fit the bottom of the brewer. This helped prevent the filter from sealing and causing uneven drip/flow. I was having an issue where I'd get one hole with a stream vs the 10 holes evenly dripping the coffee. I tried making one but it looked like small metal fibers might break off into the coffee, no bueno. Through other videos on the Kalita Wave I found a suggestion to use a metal disc from Flair, $12, it fits the Stagg well and so far so good.

      It's very uncovered on TH-cam so we had to fill the void! We also have used a tea strainer screen or other mesh screens to help with flow. It makes a huge difference! Something we also found is giving the inside of the brewer a wipe down especially around the holes seems to help with flow. We're still testing that out, but it may be something to do with residue that adds some resistance to the brew.

      I have a problem as well with one hole being the primary flow point. I have added the flair disk but still am having the issue. I also am using it on the fellow double wall tasting glass, and maybe it’s just me but I have an issue setting it perfectly level on top. Obviously if it is slightly tilted to one side this would cause the water to all funnel to one side. I wish it clicked on somehow instead of just sitting on top. All being said I am still making great coffee with the [X] just feel like I’m not getting it’s full potential. Great video, cheers guys!

      Great comments! I have both the Fellow X & XF. I found the Flair shower filter to be very helpful for the larger XF but not necessarily useful for the smaller X. (I originally got the screen to use with the Kalita Wave Metal Dripper - another story but same flat bed PO reason). I recently started grinding my coffees for Pourover methods a bit finer than recommended & have found tastier results!! Especially with the Stagg X. So haven't found the need to use the shower screen. Tho.... maybe i will experiment, which is the fun part about brewing coffee for me.

    Hey there! Excellent video looking forward to trying it when mine gets here. Just curious if you think this could be adapted to an iced coffee by doing the standard 40/60 ice to water ratio? My thinking is it may not be enough water in the actual stagg x to get a decent extraction...? Thanks for the tips!

      Hey Phillip, we wouldn't recommend adjusting this recipe for iced. You might need to come up with a different recipe and higher initial dose to get a decent iced coffee.
      The struggle here is that it won't be enough water as you've mentioned and grinding a lot finer to balance that out might not do the job either.

    Great video!! Thank you! I have both the X & XF drippers. Mainly i use smaller X. But the XF is very useful for brewing over ice in summer months. Please note I use the Flair shower screen with the XF ...

    Great video - what do you think the Max capacity is i.e could it do 30g coffee/500g water? Have you played around with Kalita wave filters instead of the standard Stagg ones? The stagg filters are pretty pricey...

      I would say the max cap for the Stagg [ X ] is 30g. Even at 30g, it will require much coarser grind size and more pulses, which will effect the final outcome (flavor). I haven't used the Kalita filters, but I prefer the Stagg filters because they are a bit thicker.

    Hi, could you make a video where we can see the bed of coffee while you pour? Or can you give any tips on how and where to pour?

      You'll want to pour in circles and anywhere on the bed of coffee. For this recipe in particular, we'd recommend you try pouring across the whole bed including both the outside and the middle.

    I have a Stagg XF, how would you suggest the coffee and water ratio (and how much water each time) for two servings for FX? Thanks!

      Hey Kimi! We haven't brewed with the Stagg XF, but here's what we're thinking.
      Go for 58g : 1000. Do a 120g bloom - 280g second pulse - 3 x 200g pulses.
      That's probably what we would try. Hopefully that helps!

    Would you say this is worth it for a casual guy who just likes a bit of coffee with his day? I really like how it looks and the function for say camping etc

      Hey Rob, It may or may not be worth it. If you're okay with putting in the extra work to brew the coffee, this would work great and definitely functional camping.
      If you want something a little more plug and play, a really good drip coffee maker will fit you a little better

    Somehow I can’t manage to pour with the mighty without one drip sliding down every time on the outside of the server.. 🙈😩 what am I doing wrong? (I have this problem just with the mighty..)

      That's unfortunate! Could just be a product error, but otherwise our mighty is working great.

      Not quite sure to be honest, but we've hear that people have used Kalita filters in them and that works?

      @@MirrorCoffeeRoasters Kalita 185 filter works well. I find the price for these Stagg filters to be ridiculously high.

    My brew ends at 2:30 maximum, even with denser coffees like Ethiopian. I’m grinding finer than I would for V60. Any suggestions?

      Are you using the dose in this video, 23g? Also, because of the flat bottom base and the many holes of the Stagg X, you will need to grind finer than your V60 brew.

      @@MirrorCoffeeRoasters Yes. For smaller doses I usually use 19 to 300, and get about 2:10 for some reason, even if I try to grind finer. I went like 3-4 clicks down on Timemore from V60 (I usually get 3:30 with 19:300 using it), and I still can’t get even close to 3 minutes.

      With the Fellow Stagg, a key part to getting a good brew is your dose. Try taking that coffee and upping the dose while making the grind finer. A deeper brew bed will slow down your brew. Try maybe 25g of coffee to your desired water amount.
      We have noticed that some coffees, we really had to crank the grind either coarser because it took too long or much finer because it brewed too quickly.

    Hey. About how many clicks on Encore would/do you use?

      It would depend on how your encore burrs are calibrated. It could be either 8-10 if it's more on the coarser side or if it's calibrated finer, try anywhere around 15-18.

      Couldn't say what the TDS extraction was for this brew, but the Fellow Stagg X does a really great job at getting high extraction

    You sure about that 210F? That's a bit above any recommendations I've ever seen

      Hi Brett! Yes, we're sure. The reason is, the warmer your water is, the more you'll be able to extract out of your coffee. The only exception probably to this would be if you're brewing dark roasted coffee. Dark roasted coffee is easier to extract so coming down on the temperature a little bit might help with a tastier cup.

    Whyyy are the numbers so uneven? 23g of coffee to 368g yield... 68g water for bloom.

      The brewing ratio standard is 1:16. For one gram of coffee, you add 16mL of water.
      Depending on how much you want to brew, you can adjust those numbers by using more or less coffee but keeping the same ratio.
