Kuih Bakar Berlauk | Malay Savory Custard Cake

  • Hi semua! Kali ini teringin pula saya nak membuat kuih bakar berlauk untuk minum petang. Asalnya nak buat kuih cara tapi malas pula nak buat satu per satu menggunakan acuan kuih bahulu tu. Memang sedap dan lembut kuih bakar berlauk ni ditambah pula dengan rasa pasta bersama inti daging yang dimasak bersama rempah kari. Resepi ini menghasilkan 21 keping kuih bakar berlauk menggunakan loyang muffin.

    PASTA:
    1 cawan pasta (boleh pakai pasta spiral, makaroni atau pasta riben)
    1/4 sudu teh garam
    Sedikit minyak sayuran
    Air secukupnya untuk merebus pasta
    BAWANG GORENG:
    6 ulas bawang merah )hiris nipis)
    2 ulas bawang putih (hiris nipis)
    1/2 sudu teh gula pasir
    1/4 sudu teh garam
    2 sudu besar tepung jagung | 14 gram
    Minyak masak secukupnya untuk menggoreng
    INTI DAGING:
    1 biji bawang besar (didadu)
    2 ulas bawang putih (tumbuk/parut)
    1 inci halia (tumbuk/parut)
    300 gram daging cincang
    4 sudu besar serbuk rempah kari daging
    Lada hitam serbuk (kasar) secukupnya
    Garam secukup rasa
    Anggaran 3 ke 4 sudu besar minyak goreng bawang untuk memasak
    ADUNAN KASTAD:
    3 biji telur gred B
    1 sudu ke 1 1/2 sudu teh garam | 6 ke 9 gram
    1/2 cawan susu segar/susu penuh krim/susu sejat | 125 ml
    1 kotak kecil santan krim | 200 ml
    2 sudu besar tepung jagung | 14 gram
    2 cawan tepung gandum | 250 gram
    2 & 1/2 cawan air | 625 ml
    1/2 sudu teh pewarna kuning
    1/4 cawan marjerin/mentega (cairkan) | 57 gram
    HIASAN:
    Hirisan daun sup & daun bawang
    Hirisan cili merah
    SUHU MEMBAKAR: 200℃ | 392℉ selama 30 minit. Panaskan ketuhar selama 10 minit sebelum mula membakar. Bakar pada rak tengah dan gunakan api atas bawah.

    In this video I'm going to share a delicious savory Malay kueh called Kuih Bakar Berlauk. We love the flavors of these kuih bakar berlauk especially when they're eaten warm. I made these kueh for our tea time. Initially I want to make kuih cara berlauk, but making kuih cara is actually time consuming since the mold is small and kuih cara is cooked on a stove instead of oven. So I used muffin tin to bake my kuih bakar berlauk. This recipe makes 21 pieces of kuih bakar berlauk.
    Happy baking!
    PASTA:
    1 cup of pasta (can use spiral, macaroni or ribbon pasta)
    1/4 tsp of salt
    A few drops of vegetable oil
    Water for boiling pasta
    FRIED SHALLOTS:
    6 shallots - thinly sliced
    2 cloves of garlic - thinly sliced
    1/2 tsp of granulated sugar
    1/4 tsp of salt
    2 tbsp of corn flour | 14 grams
    Cooking oil as needed
    BEEF FILLING:
    1 onion - diced
    2 cloves of garlic (pounded/grated)
    1 inch of ginger (pounded/grated)
    300 grams of minced beef
    4 tbsp of meat curry powder
    Coarse black pepper powder as needed
    Salt to taste
    CUSTARD:
    3 medium sized eggs
    1 tsp to 1 1/2 tsp of salt | 6 to 9 grams
    1/2 cup of fresh milk/full cream milk/evaporated cream | 125 ml
    1 small box of coconut cream | 200 ml
    2 tbsp of corn flour | 14 grams
    2 cups of all purpose flour | 250 grams
    2 1/2 of water | 625 ml
    1/4 cup of melted butter/margarine | 57 grams
    1/2 tsp of yellow coloring
    GARNISH:
    Chopped green onion & Chinese celery
    Sliced red chilies
    BAKING TEMPERATURE: 200℃ | 392℉ for 30 minutes. Preheat oven for 10 minutes before baking. Bake at center rack. Use top and bottom heat.

      Waalaikumsalam..you can omit pasta, about 20 pcs if using regular muffin pan 😃
