I worked at mink ranch for a short while (skinning season), in the chop up room where the horses etc were processed they would insert a small copper tube under the hide & inflate . Makes the hide peel right off. Easy peasy.
A blue trap on the ground/floor helps when it comes to clean up. You are lucky to have GREAT help. I've found when splitting angle your sawzall pointed upward.and as stiff of a blade as you can find.
I have a friend who is a butcher that does mainly deer processing. Said to remove hair from the meat he uses a mixture of 50 % water and 50 & vinegar. Just spray it let it soak a few minutes and rinse. I don't know if it works or not but it's worth a try. Nice video.😊😊😊😊

I've never heard your tip about the direction of the knife...in to out..on skinning. I do it during the gutting process, but not the skinning. Makes perfect sense, not cutting the hair.

McGie, you have butchered over 4000# of standing weight beef this year by my estimation. Are you eating that much on your carnivore diet? Or are you selling some of it? Keep up the great content. Cutting it up would be interesting too. The steel you use to hone your knives doesn’t actually sharpen the blade, it realigns the burrs on the edge. Some great videos about that too. It’s a different process to hone your blade than sharpening with the warthog.
That’s a great question! We have not eaten all of the first two big beef’s yet…… but we’ve really put a dent in it…… no beef gets sold here! This one belongs to my neighbors….. one of which is also a strict carnivore! So the meat will be eaten!😎😎😎

We ate quite a bit of sweet bread seasonally growing up along with a lot of organ meats from Papa’s slaughterhouse. We had no clue how nutrient dense that organ meat was back then. The mineral content is off the charts for most of it. This was really good content and instruction. I couldn’t find any fault with your method. Sure wished we had a sawsall growing up. A meat saw and/or meat axe is all we had back then.
Just wondering if you know that you can take back foot n lower leg of by cutting in the joint at the bottom of hock it’ll snap off just like the front leg at the knee

Great video... On the sawzall. Do you use a demolition blade.. The last time I used a saw to cut food. I was building an office in Irving Texas. I went to the store, to get my crew lunch. I bought 5 loads of lemon cake. But we didn't have any knives long enough to cut it up... Bring in the miter saw... Oh Yea... Sliced like butter.. Country boys can survive.

Dad taught me almost 50 yrs ago to tie off the urethra and anus with string or fishing line when getting them out to keep from accidently spilling onto the meat. we will be doing ours some time in oct.

You would want to ask a veterinarian about that first question,…. The blood and guts get put out for the buzzards and the other critters that enjoy such things.
Do you ever keep the kidneys? Also, do you ever clean the cow intestines and use it as sausage castings or perhaps just fry it up or BBQ it? Did you do anything with cow's stomach? I once had cows stomach stew, within Dominican Restaurant, and it was interesting thing to try. What was done with all the other internal items that finished within the large container?
Yes we keep kidneys sometimes but never have made sausage casings from the intestines of cattle. No to the stomach as well……. These are all things that we will do when we become a third world country.

I left a comment about how legal this is,,, I’m not against these folks or wish them any bad …it good that he got a free 4 or so hundred pounds of meat but I’m just saying be very very careful about this ,,,it’s a slippery slope and you can end up in hot water … cattle are not wild animals…that being said… I wonder if that meat tastes different than say a ??? Hell this is ridiculous…there’s grain finished and straight out the pasture,,,I’ve never tasted the difference of green feed or grain feed ,,,but it’s been so long since I’ve eaten fresh beef…
As the owner of this "wild heifer", and husband of the woman you see helping butcher...I can assure you there was nothing illegal about it. We call her wild because of her actions, not her breeding. Her momma is still walking my pastures. The straight truth is she jumped the fence one too many times. We didn't need the beef, but adding to the freezer stock was better than chasing her back into our pasture again and again.
