Looks like you need some of those plastic bone scraper tools. The good thing is they multitask and can be used to deflesh gar meat from the sinew to make gar balls and gar patties.

I've never done a cow, biggest thing I get is deer and goat. I can't imagine how hard that would be without saws and slicers. Looks real good. Old timmers always grained their beef for a month or two at the end.
It would take at least twice as long without the saw to cut it down to manageable size!

If you take one of them nice big chuck steakes on your hot smoker you can make sometging that is just as good as brisket. I do it for about two hrs covered in salt pepper and finely ground montreal or other steak seasoning. Its so good

Looks like some great beef the steaks looked great, perfect way to feed them, how long did you feed the grain before you butchered?
We fed him for 11 weeks. Gradually giving him more until he was getting 2&1/2 gallons of feed and a half wheel barrow of silage, twice a day!

Grind up the fat and mix it with the deer meat, I like it way better than pork. 5 or 10 percent is how we mix deer burger and sausage.

The next time you decide to break down beef, have a qualified butcher show you how to do it correctly.
The hips should have been boned out never see a saw.
Or find a butchering class somewhere close.
You’ll find that breaking it down to proper retail cuts is the better way to do this.
I’d love to see it done sometime……. Getting information from a butcher is not easy.
@@McGieHomesteadAdventures that’s very true, in Canada where I did my apprenticeship 40 + years ago the trade has drastically changed.
We learned how to do everything from killing to retail smoking & curing.
The trade has changed to an assembly line where a meat cutter just does one thing all day, not a trade as such.

Its great to see the whole family pitching in and getting involved, but man, my OCD kicked into turbo overdrive watching him break down and portion the steaks. You invested SO much time, money and energy into rearing, caring for, and ultimately processing that animal into food, so why take so little care when steaking and butchering the beef? Maybe Im just neurotic, but I would take a lot more care in portioning and butchering the meat that you put so much hard work into...

You are teaching your kids a dieing art. I grew up raising all are meat and vegetables. We canned are vegetables and cut up re meat making bacon, sausage, hams exct.

Being a butcher for 29 years they need some more training...they ruined alot of cuts ....but it is the best way to learn...everybody needs to be shown or has been shown
And the beauty of it all, even the screw ups still taste like beef. I have tons of respect for butchers. I'm still too chicken to attempt a beef. I'm comfortable with doing hogs though. Ha!

There is an art to cut up meat. I am a beekeeper and it has taken years to learn the tip and tricks. A butcher is the same way I would guess.
It's not like raising chickens, feed and water them and gather the eggs.

Not so sure about life in Tennessee, but up these part, when butchering a critter like that, and you get to all that good stuff as your are cutting, well, I think that is called hanburger meat!! For her next birthday, Christmas, or 2 days before the Fourth of July, you could order up a nice bone dust scraper for Ms. Grace to more safely and efficiently remove the bone dust from all your various sawn cuts Micah! Pay no never mind to them libturd loopy loos what will come out whining and crabbing around about setting Ms. Grace up with proper tools for a right proper job well done! Your boys are going to be all set with summer hamburger season just around the corner from all the fine looking hamburger meat they have put up for storagge. And the parting shot of that finely cooked up steak, well that is way more than Yummy in appearance; that is a fine start to a Great Day!! -Bob...

And why not? We have plenty of people that don’t have a clue where their food comes from! We have an entire society being told that eating meat, especially beef is a form of racism! I’m not understanding your problem. We didn’t really even show the animal only the meat! Do you blindfold her when she eats chicken? I’m starting to think you are just trying to see how far you can go before I call your bluff…….. well I’m calling it now! You aren’t serious! No one in their right mind would even dream of a magical age where we’re allowed to know we’re eating animals. When my daughter was 3 we went to an all you can eat buffet and when she saw all the meat at the buffet, she exclaimed, “ Dad, who shot all this?” She wasn’t too young to know we’re eating animals and birds and fish…….. and she loved it!

She never made the connection between meat and animals in a way she understood, and I think showing her a video of a cow being butchered was a bit too much too fast. I am being serious, though hopefully she starts to understand it soon enough.
